To help some lost ones: What Ben mentioned wad creme fraiche (its french, dont quite know where the accemts go) and not cream fresh. Its a soured cream with about 30 - 40% butter fats, where as the more well known sour cream has about 15-20% butter fats.
You could use Greek yoghurt or sour cream. Creme fraiche is basically fancy sour cream that is popular in Europe. I live in Canada and I've seen it sold at speciality food stores here but it is expensive so I usually just use regular sour cream in recipes that call for it.
Very good video. I will be making this, and am sure it will be a big hit with the family. -- The one thing I will not be doing though, is using an unwashed cocotte. At 3:58, when one of the cocottes is lifted up, we see that the sticker is still on the bottom. Meaning that the cocotte hadn't been properly washed, before they used it to bake with.
like are you asking why they're saving it? or what you can put it in? they're saving it because wasting it would be a shame but, you can put it in any recipe that needs a stalk, so you can put it into stews or sauces.
Don't like runny yolks. I would assume it would still work if you broke the yolk or semi scrambled them? What is creme fresh? I'm in the US. Is it like a yogurt, cream cheese, or sour cream? It looks really good though! Would love to try it. Will have to check out the recipe!
hey there! i live in msia and it is hard to find sour cream here too. I managed to find them nowadays but it is really expensive. Normally i'd just substitute it with yogurt.
omg i remember my grandmother making something similar to these... i always made her scramble my eggs because i didn't like the runny yolk... now i don't mind... i so have to make these now...
you can try and make a veggie soup or something with asparagus, sweet corn, beet, carrots,(...) .. or you can even throw it as a fancy meat sauce with a couple more ingredients (add skim milk and a bit of corn starch for consistency). Just saying this from the top of my head, that's why I am not being very specific!

Creme fraiche... it's normal cream with a little lemon juice... so yes, slightly soured.
It's brilliant in something like a bolognaise for that extra depth of flavour.
i just made this and oh my GOD its so good holy moly. i absolutely love it, definitely going to make it again!!

would this work just as well if i wanted to scramble the egg first? or would some of the cooking steps have to change?
what do you use the mushroom stock for?
Where can I buy the little pots these are baked in?

How high does the water need to be? Does it need to cover where the egg would be?

The link to the recipie doesn't work anymore :(
Use the mushroom stock to make a mushroom risotto, or to flavour a creamy mushroom sauce for pasta
Is the white stuff like sour cream?? What is it??
You can use mushroom stock for soups or risottos :)
I use it for risotto! just add more salt dan usual because it doesn't have the salty taste normal stock has
yummm. looks delicious! all the best things in one dish AND healthy!
What can I substitute bacon for? I'm a semi-vegetarian so I don't like most meat
I really do want to try this, but I'm a pescitarian.
What could I replace the chicken with?
can i use it in a risotto?
Could you use cottage cheese instead of creme fraiche?

Those sorted chaps are so restrained! Looks like brilliant food.
