Having the wbfs is easier, you just locate the game in Dolphin and extract it. But you could also extract it from a physical game disk with the right tools of course.
You remove them from the skuscene (generate a new one without the maps' codenames you'd like to remove), the mainscenes themselves packed in ipks (JD by default packs multiple maps into one package, be careful) and update the securefat.gf. If the skuscene, securefat and maps added all match up, the game should start up without any errors.

Could this tutorial be applied to old gen consoles like Xbox 360 and PS3?
The modding process itself is probably similar, but no. They use gestures instead of msm moves for scoring for instance.
Does it also work with other versions of Wii?
You should be able to play it on vWii (Wii U) and Dolphin Emulator on PC.
