How to make Cheesecake Chimichangas - deep fried cheesecake

Cheesecake is one of my favorite desserts - and who can resist fried food? so the two together - FRIED CHEESECAKE??? seriously amazing and so easy to make!

This is a copycat recipe from a local restaurant - and so easy to make at home. You can use a fryer or simply heat oil over the stove. The best part is you can top it with anything you want and even flavor the filling for a more personalized dessert! I can't wait to try this with my caramel, chocolate and peanut butter cheesecake fillings!
CHEESECAKE CHIMICHANGA RECIPE
Crust
1 C graham cracker or cookie crumbs
1 Tbsp sugar
6 Tbsp butter - melted
Mix the crumbs and sugar
add the melted butter and knead together
Cheesecake Batter
1 lbs cream cheese
½ C sugar
1 tsp vanilla
1 whole egg
1 egg yolk
Beat the cream cheese until smooth
add the sugar and vanilla and beat again
add the egg and yolk and barely mix in on low
Chimichangas
flour tortillas (I did 6 inch and made 12 chimichangas)
crust
cheesecake batter
toothpicks
hot oil (350 degrees F)
cinnamon and sugar mixture
pour a spoonful of crust onto the tortilla
pipe the cheesecake batter on top (spreading will just lead to more of a mess and thinner batter)
fold in the sides then the top and bottom and secure with a toothpick
fry 2:30 mins on each side
pull out and roll in cinnamon and sugar mixture
top with any cheese topping - serve warm
