Just found your channel and this was the second of your recipes that I prepared. The Caneles were incredibly delicious with a caramelized crust and a custard-like center---I froze several just to avoid temptation. The Chicken Parmesan was another keeper. Followed your clear instructions exactly, and was favored with an extra crunchy yet light coating and a chicken that was both flavorful and moist. I have been patting myself on the back all day! Thank you for sharing your extraordinary talents.

Ms Beth, at 74 I still enjoy a nice kitchen and a fine meal. The past few years have brought a pellet smoker, Instant Pot and most recently the air fryer with the recent sales. I thought it would be a good addition after the convection on my Breville stopped working and not wanting to turn on the KitchenAid oven for the two of us. I am amazed I did not discover your online presence till recently. Yes I have looked at all your AF recipes as well as numerous others. And yes I did melt the cheese in it as well. Four cutlets fit perfectly. For Christmas eve I will repeat a wonderful bouillabaisse recipe from chef Jacques Harbinger and I will continue to search for a Christmas Day dinner from your collection as well as my numerous cookbooks. I was made this for dinner and my dad was yelling at me at 2 pm because I wasn’t making dinner yet. Dinner was on the table at 7. Now I understand😂. I also made homemade sauce. (To top the chicken before you add the cheese) That took a while. I had lots of sautéd onions in the sauce.
Beth can you also make a video on how to make eggplant parmigiana? I don’t know if we just follow these same steps or if it’s totally different but when I went I Italy I ate it and it was so delicious that I want to make it at home.

Do you remember where they are from? :) When I managed to find a Pyrex measuring cup in Germany I was really happy. Every time I use it I explain to my finance, that this is the exact item that Beth uses in her videos. If he is annoyed he does not show it :) But we really love all the recipes made from you. This is amazing Beth! All that hard work and time really pays off, it can be seen in the final product. However, just one question. Here in my county we say to NEVER salt the chicken beforehand , because it will leave it rubbery and dry... Any explanation of why salting it 24 hrs before helps? :) THanks!

Oh sure that's a good way to do it! I'd add a little olive oil too :) Funny enough I don't have any recipes with Spaghetti Squash! I'll have to get to that! Ha!
I have your lemon pound cake in the oven. For the 3rd time. First 2 I dropped an entire egg shell in the batter while the mixer was on. But the 3rd time so far so good. Also, any update on the garden channel?

I make nice crispy chicken parm using crushed corn flakes and panko as breading but I can never get that good parmesan flavor even tho I do put the parmesan in the breading mix! How do I get it to have the nice cheese flavor?
I would just make sure that the Parmesan you buy is in a block of cheese you grate yourself, not pre-grated cheese, you'll get more flavor that way. Also you might try parmigiano reggiano next time, it has a bolder flavor :) www.parmigianoreggiano.com/
Personally I don't since it's been proven that the cooking kills any bacteria and in fact rinsing chicken in the sink spreads the bacteria in your sink, which causes more cross contamination issues. So I don't rinse it. Hope that helps! :)

YES to salting the chicken. My mom did that when she had to use white meat (she only really liked dark), and it was the only way she'd eat it.

Here in my county we say to NEVER salt the chicken beforehand , because it will leave it rubbery and dry... Any explanation of why salting it 24 hrs before helps? :) THanks!

Oh sure that's a good way to do it! I'd add a little olive oil too :) Funny enough I don't have any recipes with Spaghetti Squash! I'll have to get to that! Ha!

I make nice crispy chicken parm using crushed corn flakes and panko as breading but I can never get that good parmesan flavor even tho I do put the parmesan in the breading mix! How do I get it to have the nice cheese flavor?
I would just make sure that the Parmesan you buy is in a block of cheese you grate yourself, not pre-grated cheese, you'll get more flavor that way. Also you might try parmigiano reggiano next time, it has a bolder flavor :) www.parmigianoreggiano.com/
Do you wash the chicken before you salt?
Personally I don't since it's been proven that the cooking kills any bacteria and in fact rinsing chicken in the sink spreads the bacteria in your sink, which causes more cross contamination issues. So I don't rinse it. Hope that helps! :)
