Hi Vachef. I notice you did not list Lichen / Kalpasi in this list of spices. Why is that? Do I need to roast the Lichen/Kalpasi spice on low heat before I blend it into a powder to add to the biryani marinade? Thanks! Love your work! :)
I usually grind the red chillies, coriander seeds and cumin seeds separately too for cooking as they always give a little freshly ground taste to my food. Also storing the ground spices are important as humidity can fade the tastes away if they are exposed.

@lilette82 It's javitri - which is mace. You can buy it at some indian grocery stores. I have seen little tubs of ground mace (powder) in Wal-mart's spices section too. Relatively expensive though (over $4 for a little tub) compared to an Indian grocery.

You rock bud....Probably the only person who isn't commercial. Don't go the other way even if it is tempting. There are lots who don't get to eat what you show. Let us at least enjoy looking.
lamb n mtn doesnt cook fast, so v use tendarizers to cook soft n tender as quick as possible..Yoghurt n papaya paste r also natural.tenderizers..Marination using these tenderizers would help u to cook ur meat fast n tasty..Hope this explanation could help u in understanding what tenderizers are...:)

you can replace prunes by dates or sultanas (black raisins). but you can skip this altogether if you dont have any.
