    Hi Vachef. I notice you did not list Lichen / Kalpasi in this list of spices. Why is that?
    Do I need to roast the Lichen/Kalpasi spice on low heat before I blend it into a powder to add to the biryani marinade? Thanks! Love your work! :)

    I usually grind the red chillies, coriander seeds and cumin seeds separately too for cooking as they always give a little freshly ground taste to my food. Also storing the ground spices are important as humidity can fade the tastes away if they are exposed.

    Thanks a lot chef for sharing Biryani masala recipe. And all other recipes. I have 2 questions:
    1. How can I replace dried prunes, as I don't have those.
    2. Do we need to dry roast ingredients before grinding?

      you can replace prunes by dates or sultanas (black raisins). but you can skip this altogether if you dont have any.

    I used it thrice - once as plain rice biryani, next time as vegetable biryani and lastly as chicken biryani and everytime it came out good. My question to the chef is that while preparing the masala can i use onion powder instead of fried onions (as it may save time); if yes then how much onion powder should i use instead of 2 tbsp fried onions

    @lilette82 It's javitri - which is mace. You can buy it at some indian grocery stores. I have seen little tubs of ground mace (powder) in Wal-mart's spices section too. Relatively expensive though (over $4 for a little tub) compared to an Indian grocery.

    lamb n mtn doesnt cook fast, so v use tendarizers to cook soft n tender as quick as possible..Yoghurt n papaya paste r also natural.tenderizers..Marination using these tenderizers would help u to cook ur meat fast n tasty..Hope this explanation could help u in understanding what tenderizers are...:)

    i love your show. however i sometimes don't understand the names of the ingredients. for instance in this recipe, which i wanted to use tonight, i noticed that you had 15 bowls of ingredients but only 14 in the transcript. did i count wrong?
    in future i am talking 2016 can you please be more specific with the names of spices and such?
