Expiration dates are estimates anyways, I've had food spoil way before and way after the days shown. As long as the food is something relatively solid (not majority liquid or dairy product), it passes the sight and sniff test, and it's eaten day of, then it's probably fine.
The expiry date isn't the day that it goes off, it's the day that the manufacturer will no longer guarantee it's quality/safety, so at that point it's eat at your own risk
