This looks similar to a side dish we eat with rice here in Malaysia. We call it masak lemak labu, where pumpkin chunks and tapioca shoots are simmered in a savory coconut milk broth, but it's not vegan since we normally add dried anchovies for the umami flavour. It can be easily omitted and replaced with shiitake instead.
here in indonesia, we call something similar to masak lemak labu as sayur lodeh. cook it with coconut milk, garlic, chilli, onion, salt, sugar, ginger and basil (to add more flavor). add lots of veggies (basically you could just put anything you like), and voila it's done!! it's one of my all time fav dishes 🤤

So I just made this and it's epicly delicious! I used what I had at home: butternut squash, celeriac instead of turnips, dried curry leaves, brown mustard seeds, dried red chillies. What I'm saying is, even if you don't get the precise ingredients, I'm sure it will still turn out great. (Surprisingly, the celeriac partners amazingly with the squash btw. - I need to remember this combination!)
@@keep7smiling Yes, thanks, I agree, you almost can't go wrong with any coconut milk based soup. I made it today. I had a kabocha pumpkin, fresh curry leaves and the green jwala chilles - and went with brown mustard seeds... It was yummy!
little difference it really makes in final product.. but those are def black mustard seeds that Ryoya is using, they’re the smallest and densest between yellow, brown, black, etc. Cheers! 👋
