Ingredients: serves 2
100g Okinawa black sugar
100g water
40g kudzu powder
120g water
Instructions:
1. in a sauce pan, put black sugar and water then simmer for 10 - 15 minutes on low heat. set aside.
2. add water to kudzu powder little by little and let them dissolve.
3. pour the mixture into a pan, float it on the surface of boiling water.
4. sink the pan into boiling water after the mixture become kind of solid.
5. in a minute or so, the mixture should turn transparent. then transfer it into cold water.
6. slice the kudzu sheet and serve with the black sugar sauce.
7. Enjoy!

「材料」 2人分
黒糖 100g
水 100g
葛粉 40g
水 120g
「作り方」
１、小鍋に黒糖と水を入れ、10~15分ほど弱火で煮詰める。
２、葛粉に水を少しづつ加えて溶かす。型に流し入れる。
３、鍋に移し、水を加え沸騰させた鍋に型ごと浮かせる。
４、葛の液体が固まり、動かなくなってきたら熱湯に沈める。
５、すぐに半透明になり火が通るので、水をはったボウルなどに移す。
６、葛を切り、黒蜜と一緒に盛り付ける。
７、エンジョイ♡

"Can I substitute Kudzu?"
I don't think so. If you use other kind of starch powder, the texture would be so different. I mean You could make using other starch, but we would never call it Kudzu Kiri.
"Can I substitute Okinawa black sugar?"
umm... You could use palm sugar or brown sugar or even dates but again, Okinawa black sugar has its unique flavor, so...maybe you understand that.
"Where have you been?"
I didn't go anywhere. lol I make videos when I have an urge to make them. so it just happened yesterday :)

Wonderful video! I’m just wondering about how the sugar can be black. I’m from Vietnam and one of the types of sugar here is from a juice of a “coconut-like” fruit. It’s also solidifies into cube-reminiscent shapes but the color is brown... I can’t help but think of sesame seeds when I see the color but what do I know 😅 it’s also super impressive you’re able to remove the kudzu sheet so well, I would have definitely ruined it. Looks like a wonderful cool treat for a hot day :D thank you for the video!
