There are mainly two types of alkaline water or lye water sold in Malaysia. One is safer for consumption and can be mixed into your food. It is made from base chemical called Sodium Carbonate. When mixed with water, Sodium Carbonate will dissolve to form Sodium Hydroxide, an alkali for making noodle, rice dumplings etc. There is another type that is marketed with the same Malay name "Air Abu Soda". This has the chemical compound of Sodium Silicate (or glass water), an alkali used for soaking "Dried Sotong" but is discarded by thoroughly rinsing off the alkali residue after the soaking process. Best way to buy is to go to Chinese Grocery that specialized on Chinese cuisine.
Yes you can get from the link. I bought from that shop delivery quite fast. Can only use for this zhang. The savoury one probably not cos the leaves not big enough 😅

Hi ruyi. Thanks so much for the recipe. Definitely going to try (just got my leaves from shopee LOL). 2 questions. Air abu is also known as alkaline water right? And also do we need to rinse the rice after putting the alkaline water for 30mins? many thanks!
Hi thanks for trying ! Hi get the one that is Air Abu “Soda” the one that has “ Soda” word at the end as shown in my video. No need to rinse the rice after putting the alkaline water for 30 mins

Hi, Dragon Boat Festival coming soon. Thank You for sharing. 😋
Didn't know there is fresh bamboo leaves available.
Hello 👋 you’re welcome ☺️. Yes but I think can only get online. I tried to get from the market of supermarket but can’t find.
So I can get from the link your provided in the description box. For this I think we use smaller leaves. How about bigger leaves?

Hi you can get online, baking supplies shop (bake with yen) , shops that sell dried goods,
Is there another alternative to alkaline water?
Hi I’m not sure. The alkaline water give it the amber colour and chewy texture.
Hi Ruyi, where can I get the bamboo leaves you used in the video ?

I eat it with honey or syrup.
Sounds delicious! Usually I have it with just plain sugar or gula Melaka syrup
