So the sauce is a traditional Beijing style sesame sauce, it's made by mixing 20% sesame paste and 80% peanut paste, there are other proportions, but the 20-80 is the most common. Sesame paste by itself has a slight bitter taste, so mixing it with peanut paste will lessen the bitterness.
When we hot pot, we have two pairs of chopsticks. One pair for putting raw meats into broth. When meat is cooked, we use the other pair to pick cooked meat up for eating. We don't mex these two pairs for sanitary reason.
we sanitized things by boiling or heating. the broth is boiling, isn't it? for ready-cooked food, yes, for hot pot, it's more psychological than it's needed. btw we use chopsticks to pickup food, rarely stick the chopsticks into mouth, close to, but never into.

Please try a kind of chinese pie called肉夹馍(pronounced similar to “roger more”). It's a crispy bread with a lot of well seasoned meat inside, very juicy and delicious. If you find it in the street of Beijing or anywhere in China. Just try it,and you'll definitely love it.

that's the typical Beijing-style hotpot sauce, a combo of sesame sauce and peanut sauce (2:8 ratio). the reddish and greenish stuffs are fermented tofu (mixed with red wine yeast) and (slightly) fermented leek. If you eat the noodles you could put them in the sauce bowl, give it a good stir, along with some cooked cabbage leaves. bon appetit !

Regarding China's food culture, you can roughly understand it like this. People in the northeast, such as Liaoning and Jilin, prefer stronger flavors that are not very spicy. People in the northwest, such as Xinjiang, Gansu, and Ningxia, mainly eat beef and mutton. The noodles in the north of the central region, such as Shaanxi and Shanxi, are very good. The south of the central region, such as Jiangxi and Hunan, are mainly spicy. Sichuan, Chongqing, and Guizhou in the southwest are also mainly spicy, but their spiciness is more inclined to numbing. The eastern region, such as Zhejiang and Shanghai, basically has a strong and sweet flavor. The cuisine of the southern region, such as Guangdong and Fujian, is mainly light in flavor. So, if you want to fully understand Chinese cuisine, it may take you a few years.

China has 5,000 years of culture and is also the cultural origin of many Asian countries. Every Asian country you can think of has its culture influenced by China. Hot pot originates from Chongqing, China. If you have the chance, you must go to Chongqing. Chongqing is the only cyberpunk city in the world, an 8D city, a foggy city, and a mountain city.
That is a very wrong statement. Hotspot has thousands of years of history, it could not originate from Chongqing considering how late Han people migrate there. The basic protein of modern hotspot is lamb, and beef, it could only originate from Northern China, where you get those meats. So, I will argue Beijing style (Mongolian style) is more close to the original style of hotpot.

1:43 People who is allergic to peanut must be careful. Yes it is 80% peanut sauce, although it's commonly called sesame sauce in China. It has only 20% sesame. The proper name for it is two eight sauce (二八醬). Pure sesame sauce/paste has a bitter taste, doesn't go well with hot pot.
Hi I am a proper beijingner and now I live in the uk. So for the green and red stuff in your peanut paste, it’s actually some sauce made by leek and fermented tofu, it makes the paste more salty and better flavoured. The most interesting thing of traditional Beijing hotpot is always the lamb, literally it’s so thin and you can just boil for like 10-15s for the lamb rolls, then it will taste so good and delicate. Also if you ask for hand cut lamb, the meat will be more thick, which means take longer time to boil but still it is very good. Also the lil black sauce you mentioned, it’s not soy sauce but it’s vinegar, I personally like to add a bit of that into my paste but it’s more like a personal choice. @ When eating hot pot, don't worry about the food has no place. You can always ask the waiter for an empty plate. If you go to Chengdu, don't try hot pot easily, because it's so so so so so so spicy. but You can order half of the clear soup pot, half of the authentic Chengdu pot, just try a little bit.
the bottle of "soya sauce" is vinegar. The mixture of sauce..the pink stuff could be fermented tofu and green could be chives sauce. Hot pot varies from region to region too. In yunnan it's famous for its fungi / mushroom hot pot. 😊😊

Suggestion, if you can be out of your comfort zone, all you can do is try. Sometimes, there’s no or right or wrong way to eat. Try with your own taste test. PS, in China, ask if you don’t know or understand, not like in the west that people give you that look, even Chinese asks sometimes.
Mutton is always more preferable for locals. In Beijing traditional hotpot is called’涮羊肉’(means mutton hotpot). Two most famous Beijing dishes are: Peaking Duck and 涮羊肉(Shuan Yang Rou).
now is the best moment to try hotpot, which keeps you warm throughout the whole meal! And also, you can mix and match food with sauce, that is amazing to cook for yourself.
I am from Beijing. This traditional copper hotpot is perfect for freshly cut lamb, not frozen lamb. On top of that, the broth is very light, so it doesn't work very well with beef to my taste. Sichuan hotpot would probably work better with it.. glad you guys enjoyed it
chinese pizza is the great great grand father of italian pizza. When marco polo visited china in tang dynasty, he brought back the chinese pizza and ramen ( chinese noodle ). after few century it slowly turn into italian pizza and spaghetti。yes you are right, Pizza and Spaghetti are chinese food. Sorry, you got the date wrong. Marco Polo went to China during the Yuan Dynasty. But yes, pizza and spaghetti and ravioli have their roots in Chinese shaobing, Chinese noodles (which are a Chinese invention) and Chinese dumplings (another Chinese invention invented by Dr. Zhang Zhong Jing. It’s not a joke and BS. There is historical records. Google search for the inventions of dumplings and noodles. It’s China. 🇨🇳.
the cilantro is for those who want to add in to the dipping sauce as some people don't eat cilantro. And fyi, u can do whatever sequence you like in eating hotpot, but usually chinese people go by the sequence of meat -> vege -> noodle... anything soaks up the broth/soup will go later.
Hmmm, it looks delicious! They are just different hot pots depending on the locations where the hot pots are populated by local people. The noodles need to be cooked for a shorter time than you do for dry spaghetti.
People describe Beijing as one of China’s cuisine desrts( which means no good food there) but I still love Peking duck, hotpot and zhajiang noodle there❤
5:05, It's similar when I eat a Korean restaurant last July, but in the Philippines, 7:26, Same, but different in South Korea I think, dip into the cooking, wait until it's cook. Once it's cook, you can eat it, hope it taste good. Korean food is good. But my favorite is Korean fried chicken with rice, it taste good and delicious. Do you remember what time you eat at the restaurant, is it dinner and what's the total price for all the meal?

Please try “Premium Grilled Chicken Sandwich” aka 板烧鸡腿堡 from China's MacDonalds! They have a bunch of other localized items on the menu so I'd be cool to check out and compare with what you have had in the US!
It would be better if you showed the bill paying process at the end and how much that delicious hotpot food/experience costed you two. I would imagine it’s very cheap compared to any other countries. But Beijing is typically the most expensive city along with Shanghai within China so you know if you try the same thing in other cities in China it would be even cheaper. Another reason to travel back to China soon and explore more cities. 😊

For hotpot it's more typical for people to put more meat into the pot at once instead of one slice at once, because it tastes way better if you have bigger bites than tiny pieces at once, and it won't take forever for you cook all the meat, same applies for cooking pretty much anything else for hotpot, I personally dip half plate of meat into the pot at a time lol. I also prefer Sichuan and Chengdu style hotpot more, they're far more flavorful because of their soup, it's spicy but you can request for low spicy level, Beijing probably has them, oh and try the sesame oil for dipping sauce it's really good.

Hello actually you can eat noodle goes with the soup or you can eat it like dry noodles mix with the peanut sauce (actually it is sesame sauce) or add more chilli sauce / vinegar or whatever sauce you like , you can do it either way you like. actually it’s no rules for that. That s the fun of cooking and eating, you eat what you made. Please enjoy.
Hey I'm from Beijing. The sauce is either made with 70% sesame + 30% peanut or 80% sesame + 20% peanut, so we call it sesame sauce. Also, people just put 1/2 of the plate into the pot altogether instead of cooking it one at a time. Glad yall liked it tho!

The broth will only get tastier when you put the stuff to cook in the broth. Normally its best when its almost at the end. In my hometown we put in crab, corn cob, pork ball, fish ball, mushroom to sweeten the broth.
awesome beijing hotpot video. i would eat more than 1 slice at a time, like take 3 or 5 slices, cook the slices, dunk into sauce and eat, only if the slices are thin.

Since there is so much meat , why don’t u put more meat into the hotpot instead of one by one. U can ask the waitress to give u some bowls so u can scoop up the meat into bowls with a little bit of soup in it. Put noodles into the bowl of hot soup . There u have a bowl of ramen!
There is also a very popular Hunan dish in Beijing called “费大厨”. There are many people queuing up every day. It is a little spicy but it is very delicious❤

That sauce is 80% sesame seeds with 20% peanuts, so it's sesame flavor actually. As a Beijinger we don't eat noodles with traditional hot pot, we often eat hot "Shao Bing" some kind of sesame topped baked layered bread, miss it a lot after 5 years overseas😢

So the sauce is a traditional Beijing style sesame sauce, it's made by mixing 20% sesame paste and 80% peanut paste, there are other proportions, but the 20-80 is the most common. Sesame paste by itself has a slight bitter taste, so mixing it with peanut paste will lessen the bitterness.
Judging by the look of it, fermented tofu that's blended to a paste (the pinkish part), and pickled chive flower (the green part) are also added.
The "soy sauce" is actually vinegar

When we hot pot, we have two pairs of chopsticks. One pair for putting raw meats into broth. When meat is cooked, we use the other pair to pick cooked meat up for eating. We don't mex these two pairs for sanitary reason.

we sanitized things by boiling or heating. the broth is boiling, isn't it? for ready-cooked food, yes, for hot pot, it's more psychological than it's needed.
btw we use chopsticks to pickup food, rarely stick the chopsticks into mouth, close to, but never into.

that's the typical Beijing-style hotpot sauce, a combo of sesame sauce and peanut sauce (2:8 ratio). the reddish and greenish stuffs are fermented tofu (mixed with red wine yeast) and (slightly) fermented leek. If you eat the noodles you could put them in the sauce bowl, give it a good stir, along with some cooked cabbage leaves. bon appetit !

Regarding China's food culture, you can roughly understand it like this.
People in the northeast, such as Liaoning and Jilin, prefer stronger flavors that are not very spicy. People in the northwest, such as Xinjiang, Gansu, and Ningxia, mainly eat beef and mutton. The noodles in the north of the central region, such as Shaanxi and Shanxi, are very good. The south of the central region, such as Jiangxi and Hunan, are mainly spicy. Sichuan, Chongqing, and Guizhou in the southwest are also mainly spicy, but their spiciness is more inclined to numbing. The eastern region, such as Zhejiang and Shanghai, basically has a strong and sweet flavor. The cuisine of the southern region, such as Guangdong and Fujian, is mainly light in flavor.
So, if you want to fully understand Chinese cuisine, it may take you a few years.

Hot pot originates from Chongqing, China. If you have the chance, you must go to Chongqing. Chongqing is the only cyberpunk city in the world, an 8D city, a foggy city, and a mountain city.

That is a very wrong statement. Hotspot has thousands of years of history, it could not originate from Chongqing considering how late Han people migrate there. The basic protein of modern hotspot is lamb, and beef, it could only originate from Northern China, where you get those meats. So, I will argue Beijing style (Mongolian style) is more close to the original style of hotpot.

1:43 People who is allergic to peanut must be careful. Yes it is 80% peanut sauce, although it's commonly called sesame sauce in China. It has only 20% sesame. The proper name for it is two eight sauce (二八醬).
Pure sesame sauce/paste has a bitter taste, doesn't go well with hot pot.

Hi I am a proper beijingner and now I live in the uk. So for the green and red stuff in your peanut paste, it’s actually some sauce made by leek and fermented tofu, it makes the paste more salty and better flavoured. The most interesting thing of traditional Beijing hotpot is always the lamb, literally it’s so thin and you can just boil for like 10-15s for the lamb rolls, then it will taste so good and delicate. Also if you ask for hand cut lamb, the meat will be more thick, which means take longer time to boil but still it is very good. Also the lil black sauce you mentioned, it’s not soy sauce but it’s vinegar, I personally like to add a bit of that into my paste but it’s more like a personal choice. If you go to Chengdu, don't try hot pot easily, because it's so so so so so so spicy. but You can order half of the clear soup pot, half of the authentic Chengdu pot, just try a little bit.

the bottle of "soya sauce" is vinegar. The mixture of sauce..the pink stuff could be fermented tofu and green could be chives sauce. Hot pot varies from region to region too. In yunnan it's famous for its fungi / mushroom hot pot. 😊😊

Mutton is always more preferable for locals. In Beijing traditional hotpot is called’涮羊肉’(means mutton hotpot). Two most famous Beijing dishes are: Peaking Duck and 涮羊肉(Shuan Yang Rou).

I am from Beijing. This traditional copper hotpot is perfect for freshly cut lamb, not frozen lamb. On top of that, the broth is very light, so it doesn't work very well with beef to my taste. Sichuan hotpot would probably work better with it.. glad you guys enjoyed it

Sorry, you got the date wrong. Marco Polo went to China during the Yuan Dynasty. But yes, pizza and spaghetti and ravioli have their roots in Chinese shaobing, Chinese noodles (which are a Chinese invention) and Chinese dumplings (another Chinese invention invented by Dr. Zhang Zhong Jing. It’s not a joke and BS. There is historical records. Google search for the inventions of dumplings and noodles. It’s China. 🇨🇳.
the cilantro is for those who want to add in to the dipping sauce as some people don't eat cilantro. And fyi, u can do whatever sequence you like in eating hotpot, but usually chinese people go by the sequence of meat -> vege -> noodle... anything soaks up the broth/soup will go later.

Hmmm, it looks delicious! They are just different hot pots depending on the locations where the hot pots are populated by local people. The noodles need to be cooked for a shorter time than you do for dry spaghetti.

Once it's cook, you can eat it, hope it taste good. Korean food is good. But my favorite is Korean fried chicken with rice, it taste good and delicious. Do you remember what time you eat at the restaurant, is it dinner and what's the total price for all the meal?

It would be better if you showed the bill paying process at the end and how much that delicious hotpot food/experience costed you two. I would imagine it’s very cheap compared to any other countries. But Beijing is typically the most expensive city along with Shanghai within China so you know if you try the same thing in other cities in China it would be even cheaper. Another reason to travel back to China soon and explore more cities. 😊

For hotpot it's more typical for people to put more meat into the pot at once instead of one slice at once, because it tastes way better if you have bigger bites than tiny pieces at once, and it won't take forever for you cook all the meat, same applies for cooking pretty much anything else for hotpot, I personally dip half plate of meat into the pot at a time lol. I also prefer Sichuan and Chengdu style hotpot more, they're far more flavorful because of their soup, it's spicy but you can request for low spicy level, Beijing probably has them, oh and try the sesame oil for dipping sauce it's really good.

Hello actually you can eat noodle goes with the soup or you can eat it like dry noodles mix with the peanut sauce (actually it is sesame sauce) or add more chilli sauce / vinegar or whatever sauce you like , you can do it either way you like. actually it’s no rules for that. Hey I'm from Beijing. The sauce is either made with 70% sesame + 30% peanut or 80% sesame + 20% peanut, so we call it sesame sauce. Also, people just put 1/2 of the plate into the pot altogether instead of cooking it one at a time. Glad yall liked it tho!

Since there is so much meat , why don’t u put more meat into the hotpot instead of one by one. U can ask the waitress to give u some bowls so u can scoop up the meat into bowls with a little bit of soup in it. Put noodles into the bowl of hot soup . There u have a bowl of ramen!

It’s located in the CBD in Beijing, and the food is absolutely amazing! It’s near Tiananmen Square, so after your meal, you can visit there too-they’re on the same street. It’s truly one of the best experiences you can have in Beijing!

We use this pot In the past , when there was no electricity in China, the lid on the top of the pot was used to control the air circulation and control the fire. Modern people generally go to chain hot pot restaurants like Haidilao to eat, which will be more diverse. But such a tradition is worth trying

The pink sauce is fermented tofu sauce, and the green sauce is made from chive flowers, both adding salty notes to the sesame peanut dipping sauce. Beijing hotpot rules!

That sauce is 80% sesame seeds with 20% peanuts, so it's sesame flavor actually. As a Beijinger we don't eat noodles with traditional hot pot, we often eat hot "Shao Bing" some kind of sesame topped baked layered bread, miss it a lot after 5 years overseas😢

Yes! We love this about hot pot! Each time it’s different and we can dress our sauce up to our own likings! So good. It’s quickly becoming one of our favorite ways to eat!
