      I think that's why I had so many Italian friends as a kid. You never go hungry in an Italian home. My black southern relatives are the same way. "Sit down and let me get you something to eat!"

      @@PastaGrammar a take away sort of restaurant, with fresh pasta cooked to order and in take away boxes. Like we do here in italy. That's why we don't have much US fastfood. There's no need 😅

      If they'd like to do a small scale project, how about dinner with them as a prize for something? Maybe our recipes they might like? I loved a restaurant's carbonara (didn't know about carbonara before) but wanted cheaper and closer so I made up a recipe. My BF loves it.

    What I would love is to see is how Italians prepare meat dishes. Pork, beef, chicken... I know pasta plays big part in Italian cuisine. But I also know pasta is just one part of Italian cuisine.

      Right, if we have a hundred types of pasta and a thousand ways to flavor it, we have thousands of recipes for second courses, some of which you can never taste because they are not ordered in restaurants, they are only homemade but no less good! And desserts and wine by the thousands!

      Actually a more interesting thing would be to learn how we cook vegetables. Vegetables have a bigger and more important place in our meals than both pasta and meats.

    The way Ava says 'Veggies' makes me so happy, I hope no one ever tries to correct her, it warms my heart. English was my dad's 2nd language too. That first dish though, definitely going to make that for my kids' after-school snack, how absolutely perfect! I know I'll have to make at least 2 hehe

    Growing up as an Italian in an italian neighbourhood, after school when I was 9, I'd go to my friend's house after school, and he would make the frittata di pasta as a snack for us. Things were different back in the 80's.

    I'm fortunate enough to have an Italian girlfriend, and found at an early stage from her and her mother to not reheat pasta in the microwave but to fry or bake it 😄

      The fact is that in the majority of households in Italy you grow up eating very very well. So one you become an adult and you move away, either you learn to cook yourself your mama’s recipes or you settle for some mediocre food and become sad. Eva is very passionate about cooking, but is quite a common thing even among guys. Cooking is really a big part of our culture.

      According to legend, leftover pasta is what happens, when tragedy strikes during dinner time. Say Nonna dies or the Italian soccer team loses a match. The sadness will wreak so much havoc with Italians appetites, they won't eat all the pasta in front of them.

      Leftover pasta was common in my times: you cooked more, not frequently but and then you tried to prepare a dish from the leftovers, so as to observe the old saying: food is a gift of God, none of it must be thrown away, as happens today with garbage food.

      I agree. I grew 250 tomato plants & put up 300 canning jars from pints to 1/2 gallons of Marina sauce. I am always smiling watching them.

    Thank you so much for the leftover naked pasta & leftover sauced pasta recipes Eva & thank you Harper for suggesting the leftover sauced pasta recipes.
    I have a pasta sin, I think that I need to confess.
    I am a serious leftover cold sauced pasta addict lol.
    I love the taste of cold sauced pasta. The flavors are so much better the next couple of days, especially when the pasta is cold.
    I love having cold lasagna & other leftover sauced pastas cold with a nice green salad for lunch or dinner the next few days after I make a nice big pot of pasta, especially when the weather is hot.
    It never lasted long when my 5 kids were young but now that they're grown I can have my cold pasta & salad any time I want.
    It also helps stretch my food budget out now that I'm disabled & retired.
    I also make a killer Cheesy Albacore Tuna Pasta Casserole with wide egg noodles or cork screw tri colored pasta that's so good cold, with a green salad during the Summer lol.
    Am I the only pasta lover who loves cold sauced pastas?
    Let me know if any of you like cold pastas too.

      All of her recipes here can be made with sauced pasta too. If you want a really quick solution, just melt some unsalted butter in a pan, add you pasta, and fry it until crispy. (Use oil if you are a southern Italian, but here in polentonia we know butter makes it crispier.)

      We do this! Perfect for picnic and you can layer in anything-tomato, cheese, ham, as Eva does. We slice at the beach or park.

    Great recipes for leftover pasta! Definately going to try some of those.
    These videos are exactly why I love this channel so much. I'm not a wonderful cook but I do like to eat tasty and relatively healthy food. So I'm learning a lot from watching and trying to implement some of it in my daily life. Thank you Eva and Harper and good luck with opening that restaurant, at least that's what I read somewhere in the comments.

    When I was growing up we had one way to reheat pasta. My mother made what she called "Rusty macaroni", because our leftovers were always dressed with red sauce. She simply fried it until it was mostly crunchy and the best parts were blackened.

    My family from Calabria makes this frittata a lot too! It is one of my favourites. We even serve it cut in cubes with toothpicks as appetizers at gatherings. It’s even good chilled as leftover. We typically add ricotta and homemade salami in it. I will try the ham and smoked mozzarella looks so good!

      Yes! Especially some of the sweeter wines. I had many friends who were Italian immigrants, mainly from the south, when I was younger and I used to love some of the sweeter wines (especially the reds) they would serve.
      Dry red wines are all the rage, I know, but I've always enjoyed the sweeter reds when I can find them. I usually end up getting derisive looks or looks of horror from staff when I ask for their sweet red selections but... eh! I guess I'm just a peasant at heart.

    I wonder Harper does Eva try to feed you and any visitors you have, all the time? My Italian Mother-in-law came to America when she was 9 years old and when I was dating my wife my future Mother-in-law always offered me food when ever I walked in her house. And after I was married she would often ask my wife if she was feeding me properly. And once she knew my favorites those dishes would always be there when we were over. If I didn't have seconds she worried that I didn't like it !

    1. Open refrigerator and leave door open. 2. Stand by open refrigerator door. 3. Using your fingers, eat the macaroni cold before anyone else can get to it. Preferably at 2, 3 AM at your mom's house. There's never enough to share anyway, so don't feel guilty.

    I'm Maltese, and grew up with the leftover pasta dish called Froja, which is very similar to Frittata di pasta. Frittata di pasta/Froja is by far IMO the most delicious way to reuse pasta.
    My family typically use the following ingredients for Maltese Froja: spaghetti or other long pasta, lots of fresh chopped parsley, fresh garlic (to taste), pepper and salt, paprika (optional) Parmesan cheese, and of course eggs and a bit of milk or cream.
    Makes that all together, and pop into a pan with some hot oil and cook it the same way as frittata di pasta. It is divine.

      The battle is now lost, the family that continued the tradition has been destroyed by the American way of life, there will be few girls, my personal experience, young Italians who know how to cook, Eva is an exception, and in fact she was from the south and her dishes are almost always from there, but Italy is bigger, it also includes the center and the north!

    I always make something very similar to frittata di pasta for my kid’s, however, with a Spanish twist and add chorizo and no milk or cheese. I call it “tortilla de fideos” and I serve it with a fresh tomatoes salad, and a green salad. Now I will need to try Eva’s recipe. ❤️

    The only pasta that is acceptable to reheat the day after is the one used in soups, like "pasta e fagioli". As a matter of fact soups are generally better the day after you've made it.

      It is not true, any pasta that is with a liquid the day after is swollen and soggy, only dry pasta can bear an annealing or a heated one!

      But if it happens to be too much sunny day and hot weather it is better not save any pasta, not even in the fridge... It will sure became sloppy and disgusting as you said and a culture broth terroir for bacteria...

    Hi..Im an Italian American girl from NYC (Dad's family from Calabria, Mom's from Parma) this is how we always did leftovers 😁 I always loved pasta the next day !! Crispy edges are the best part of the dish for sure!!
