  • One of the most common tiki cocktail ingredients is simple syrup. And it is super 'simple' to make. So here's a quick tutorial, some history, and even a song! If you can make this, and you have rum and lime, you're already able to make daiquiris! Simple as that!

    Oh I am all in on this you have no idea how much simple syrup I go through when I do use it it'd be nice to make it in a large quantity and just have it Great idea thank you for the video

    Thank you so much for pointing out the cooking technique for the syrup's, i watched another you tube about rock syrup using the one to two ratio which didn't work damn it haha it went all solid in the fridge so now will be doing your method! Spot on again MR Breezeway!! Loved the duo song intro too i laughed so much!!! Mahalo

    Totally new to the world of Tiki, and I have been absolutely consumed watching these videos! Quick Question about storage of these syrups; I assume they need to be keep in the fridge?

      Yes, some keep longer than others... I'd recommend you look into purchasing this book. amzn.to/48OrHm5 It's a great read for long-time tiki/ cocktail fans as well as people brand new to the scene. Hope you enjoy it!

    How about Brown Sugar Syrup? Thats the only one I made myself but again super easy, just brown sugar and water in a pan. It's really good! Happy you made this video because I've been learning from your episodes how important those syrups do become in making cocktails! Thanks my friend.

    I like the Smugglers Cove Mai Tai syrup & Demerara syrup. I don’t keep them all the time, but I do make them to change things up.

    I’ve become a big fan of making my own syrups. We usually have rich simple syrup (SC recipe) and cinnamon syrup on hand. Last week I made ginger-rosemary syrup for a specific drink we love, the Dagobah Slug Slinger. I know, it’s not tiki, but it is delightful.

    You should be in a band, dude(s) ;-) The way I mark the syrups in similar corks is simply "1:1" for simple syrup, "2:1" for rich and X:1 for whatever else I might have. It's enough that I know what they mean, the rest of the world won't be seeing the bottles anyway.

    Hey spike, I was wondering if you could feature the new backwater Bali hai branded rum? It's now at my local grocery. It's a "dark" pineapple rum, pretty interesting might be a flop but was wondering if it could work as sub for plantation but I've never tried that one.

    I just doubled the Orgeat. [Giffard 1885 ] and used Gran Marnier [1/2 oz] in my MaiTai tonight.
    [I skipped any sucrose compounds]
    Took me 9 Key Limes to get
    1 oz juice.
    1 oz TJ's Dark Rum
    1 oz Cane Run [PR white]
    Shaken not stirred into tall rocks glass.
    I lime shell, pierced with 3 tiny green mint stalks --- looking like palms on a tropical island. Smack the mint.
    Slightly off-trail, but quite the lovely beverage companion to a plate oF sushI, followed by shrimp gyoza and finishing with Lobster Yakisoba.. A small flask of hot sake loaned some JATO Assist to the evening....

      You can do the same kind of thing with a 1:1 or 2:1 with that stuff. It really is 'simple.' 👌 Demerara is my favorite

    The "cold" simple syrup is its own thing, and you use it when you want a sharper sweetness. Like, say, a classic daiquiri. It's a PITA to make, because the sugar doesn't dissolve in one go. On the other hand, you don't have to wait for it to cool down. PS I label my syrups by number, with rock candy syrup being 3 to 1, and I also add a TEENSY drop of vanilla extract to it.

    Once you get a recipe that you like, by weight is the most accurate way to recreate it.

    Given the rough measurements you used, it looks like the rock candy syrup is pretty close to a 3:1 ratio.

    Remember that simple syrup is not shelf stable while rich simple and rock candy syrup can store at room temperature. A slash of vodka into your simple syrup before storing in the fridge will help it last longer!

      Very interesting. I have heard that that small amount of vodka isn't enough to really do any preserving. Thoughts?

      @@BreezewayCocktailHour 1 part Vodka to 8 parts syrup to get alcohol level up to ~15% will preserve it longer. And the neutral alcohol doesn't impact flavor of the drink.

      Another thing that will extend the shelf life is to sterilize your bottles with boiling water before filling, as well as your funnel.

    Spike darling... You need dry measuring cups for your dry ingredients. You measured your sugar in a measuring cup for liquids. Wink...

      Yes they are; so the recipes will change. Get some dry ingredients measuring cups and compare the amount of sugar you get in the dry as compared to when you measure the sugar using the liquid measuring cup.

    A tip you didn't cover in the video but probably should have. You need to be careful to make sure you've completely dissolved the sugar, especially when going 2:1 or higher on the sugar:water ratio. Sugar loves to be a crystal, if you have a few crystals of sugar in your syrup they will pull the sugar out of solution; in a few weeks you'll have rock candy in your bottle. Of course this only applies if you are going to have the stuff hanging around in your fridge for a while, if you're going to burn through the bottle having a party then it doesn't matter nearly as much.
    I especially have this problem when making rich demerara syrup; I drink infrequently and alone so a bottle of syrup can last me over a year. Invariably rich demerara syrup turns to rock candy.
