I guess if you arent froma region where bagels are specialtys youd think they are just bread in a unique shape but they are design to have a super soft chewy interior and chruncy outside and the shape is there to give more outside to crunch on
David, I really enjoy your content because it’s you’re the unassuming, super non-pretentious guy next door that has amazing cooking skills. I don’t know if you have aspirations of getting formal training but I personally love living vicariously through you in trying to make so many different cuisines and methods as well as seeing you getting more skilled along the way. You seem so much more in control in your kitchen these days. I hope you recognize that growth too!

It might be too late but I hope you see this: After some trial and error to get the perfect bagel sandwich. I've realized that the most important thing is that as SOON as you make it, you immediately wrap it tight in parchment paper. The hot egg sausage and cheese will steam. The steam is going to soften up what is otherwise a very crunchy dry sandwich. It needs to steam for 3 minutes min. All shops inadvertently do this when they make your order. Its why it never tastes the same at home.
Pre ground pork, especially store packaged stuff, tends to be quite lean. That leads to a sausage without enough fat to emulsify and therefore the homemade sausage is dry. Try using Pork Butt or if you want to make a smaller amount, country style ribs have a good ratio of fat to meat. Just cut it into smallish cubes and partially freeze before running through the food processor.
Most import part of an egg sandwich is wrapping it in either foil or paper. It lightly steams whatever you bread is and gives the cheese a chance to fully melt. Really small thing to do that makes a huge difference.
For the first time commenting, I found you only about a week ago and couldn't stop watching your content. I was very afraid of breads etc before but now I made my own 9 ingredient recipe (that still needs a few months of work until I find out the perfect mix I bet) and I can't wait to replicate some recipes you took on in some of your cookie videos! I've never ever made any sweet like a cake or cookie before, so surely it will be a little stressful lol, but this is why I'm glad in every video for any recipe you show us the entire process! As someone who has made Claire's bagels, I will be offended if team TH-cam doesn't win. They are so good! Watching the video I'm planning the next time I can make them! I always thought New Yorkers were crazy always talking about bagels, but I get it now!
Some older people might not agree. Good Jewish bagels are too chewy for a sandwich, it's cream cheese and toppings all the way. Lox and capers, onions, maybe some fresh dill.

When I made sourdough … before we learned my husband is gluten intolerant … I added barley malt syrup to my mix, based on a King Arthur Flour recipe. It is. Wonderful addition, though when I tried making bagels, they were not a success. So impressed by your efforts-what beautiful-looking bagels! A good breakfast sandwich is a great thing. I love anything Claire Saffitz, and her book is excellent. Babish ain’t bad either.
I was disappointed that the zaatar you used isn't very similar to the authentic one. Zaatar normally has thyme, sumac, salt, and toasted sesame seeds, in Lebanon (and the middle east) we eat it for breakfast. I hope you try it, it's very versatile and tasty.
Mxiryum is just an ordinary girl who makes aesthetic cooking tiktoks. Claire is a professional pastry chef with more experience and prob works much harder on recipe development. No surprise that Claire's is much better

Mine. It's mine. Quality everything bagel. Toast the bagel. Fry deli cut ham off the bone. Bottom of toasty bagel gets cream cheese. Top gets a slice of Swiss cheese. Hot crispy ham in the middle. Try it. I'll get you my insta to see it. It's the best!
@@Bradimus1 I can already tell you it's not my preference though - I don't like everything bagels, I hate seeds, I don't like my bagels toasted or crispy either - I like them soft and chewy. I'm unable to try it even if I was willing because I live in a country where pork is not available (I do eat pork myself, I really miss it) it's hard as hell to even find a bagel-shaped object and when I do it's just bagel-shaped bread not a real bagel. And the swiss cheese here is pretty shit too.
