      Thank you! Most versions you'll find on websites use no breading. That's great too, but there's something special about this recipe with the thin breaded eggplant pieces. Where I'm from it's hard to find any places that don't make it this way.

    This is my absolute favorite dish and I make it the same way. Everyone loves it - always a big hit with the family and friends. It's a lot of work, so I don't make it as often as I'd like. Great job with the video.

    Here's a hint from an 80 year old who has breaded many an eggplant. Instead of all those forks, use the pointy end of one of those big wooden skewers. It is amazing how it works. Your left hand stays clean to do the breading. I used to keep a glass of cold water nearby to constantly whisk off the accumulation of egg and breadcrumbs from my fork, but no more. I ALSO use the skewer to turn the eggplant when I'm frying the slices. Give it a try you'll love it.

    I have made this a lot and love mine but yours looks even better! I like to use Italian breadcrumbs but any breadcrumb can be a great breadcrumb in the world! I also add more mozz on the top to brown at the end because I am cheese crazy. hahaha I don't know why but sometimes I leave some of the eggplant skin on too, but I like how you do it skinless - makes them look like chicken cutlets! Fun, wonderful video as usual. Your rollatinis look gorgeous!

    I made this recipe last night, enough to feed a family. Here's a quick REVIEW of how it turned out...
    Honest 20/10 better then any italian dish by far...extemely impressive recipe...
    Bad news....hours of work..seriously only attempted on day off other tasks. Start prep early..
    Firstly I let eggplants drain water for 4 or 5 hours...after that point i then I followed the entire video instructions varying slightly different measures or quantities of ingredients , even after 4-5 hours of draining excess water from eggplants was still very time consuming. I'm talking a good couple hours.
    However, wayyyyy better then canneloni by years..10/10 i can confidently say..my boyfriend was amazed, just make sure your pasta sauce is full of flavour and rich as this becomes the main base of flavour...if u want to realllllly impress.
    I then finished with top off with shredded mozzarella and with pecorino before oven baking covered with foil, tip don't use watery pasta sauce, thick sauce works magic... best. .will make again when I've got lots of free time.
    Warning though... but be prepared to spend hours in kitchen on preparation dont attempt with little time on your hands, like after work...it's a lonnnng process if you don't half ass it

    Your taking off all the important vitamins when ya peeling off the skin the skin gives it flavor. A Greek friend of mine showed me how to rid of water and bitterness from eggplant by applying salt on them let them sit for a while then rinse them out getting rid of salt

      I leave the skin on in most eggplant dishes. For this one it is harder to roll if you leave it on.

    I finally made this, the only thing I did different is, I fried the Eggplant in my Deep Fryer with Corn Oil. Awesome Flavor and texture ( My family judges food by TEXTURE and flavor ) The left overs two days later ( 10 minutes ago) were almost better than Fresh. A Classy looking dish when platted.
    FIVE STARS and Two Thumbs up!
    Family's request: More Sauce for Garlic Bread Dipping (this is a tough Crowd)
    Edit: I did add 2 Eggs to the Cheese mix and that kept the cheese mix nice and full and inside the Rollatini, rather than melt and leak out.

    We both have the same style of cooking.. great work! I’m Sicilian and Neapolitan.
    I make the eggplant the same exact way you do the only difference is I put fried spinach in the ricotta mix and shredded mozzarella on the top of the eggplant. Great work tho paisano

    Hey Man! this looks awesome, I'm gonna make this on christmas eve for the fam! After I fry up the egg plant and roll them up, how long can I leave them like that before I bake them? (like, will the cheese mixture make the eggplant soggy at all?) I'd like to know if I can do most of the work before hand and then throw these in like 30 minutes before dinner. Let me know and keep up the good work!

      Thanks! You can make this in advance for sure. Eggplant Rollatini is one of the most ahead of time catered items from Pizzarias, Italian restaurants, etc. The eggplant is not really crispy in rollatini and often it will be served swimming in a lot more sauce than I used. You'll be fine making it ahead of time. Enjoy!

    Am I going to ruin the dish if I don’t fry the eggplant? Eg if I lightly grill under oven element, roll then put and then sprinkle breadcrumbs on top to bake?

    Great video. There has not been a summer meal that goes by that my kids and they are grown expect a side of eggplant. And there may or may not have been several times I started out making egg plant Parmesan did not have enough by the end of the process because family walking by and taking a piece on the fly. Always an excellent video, and what do you think about doing a video on how to take care of these Italian products if you don’t use it all like an extra block of mozzarella, ricotta how long you can keep these if you don’t use them all. Who wants to waste one bit of these great products. I am going to try these as may be a mini appetizer for this Thanksgiving weekend coming up🌹💪🏼

    I prefer to grill the slices instead of frying them in oil.
    Sometimes with egg and breadcrumbs, sometimes without when want to finish everything within 30min. in the oven.👍😃

    It doesn’t have to be kosher salt , regular salt works just as well .

    I use Sicilian eggplant when I do mine...
    I think just regular eggplant has too many seeds and Sicilian eggplant don't it looks more round like a softball almost.. and more like that of an light to purple

    Anyway, I was looking specifically for *breaded* eggplant rollatinni. You were the only one who did it that way. I was trying to look for a recipe like the one from Vincent’s Clam Bar on Long Island because I think they bread theirs.
    Your recipe looks very good. I am going to try it.

      Yes. What I would do is fry the strips then freeze them so you can make it quick during the week.

    HOW LONG DOES A CAN OF BUTANE LAST IN YOUR BURNER?

      Approximately 1 hour at full heat, so maybe 2 at medium. I use this burner for videos only and would only recommend it for short use cases.

    Might be a great recipe but the quantities in the video does NOT match the printed version. Should I use 1 1/2 or 3 cups of bread crumbs? Dip egg plant in a wash of 3 or 5 eggs?

      Just follow the print recipe with the step by step instructions on my website. If I ever need to make changes, that's where I do it. I can't go back and edit an already posted video. As far as the breadcrumbs and eggs go, I needed more because I used a mandoline on my website and got the eggplant thinner.

      Thanks for clearing that up. Made it tonight and was a big hit. Next time I think I will only put bread crumbs on one side of the eggplant. The breading was a bit heavy for my taste considering how thin the eggplant was cut.

    how do i pick the right egg plant all i ever see is soft feeling i thought it should be firm feeling to me

      Soft eggplants aren't really worth buying. They should be shiny and firm. Unfortunately, eggplant can be hit or miss in a lot of stores.

      I always try to make my recipes with little to no equipment so that everyone can replicate it. That being said a mandoline would really help for this dish.

    I would love this but my wife doesn’t like ricotta cheese. Is there a substitute I could use. We both love eggplant parm or just fried eggplant

      You could do just shredded mozzarella and more spinach and herbs.
