    1 tbsp. minced bandanya / culantro / shadon beni
    1 tsp . geera
    2 tbsp. amchar massala
    1/4 cup mustard oil
    salt to taste

    Super love this recipe! Just put my grated mango out in the sun to dry. Last time I found my kuchela was too dry so this time I won’t let it dry out as much. Thank you for the video!

    You supposed to cook it in vegatable oil and then put mustard oil and some preserving power and eliminate the shado beni and leave for 5 day in sunlight to preserve

    If you are in the USofA, the simple mangoes you see at the "mega market" are similar to what you see in the video. Most widely available and cheapest to produce. Make sure to feel for firmness as stated. Imagine a slightly soft potato. Be kind, limin and wine the DDI!

    Natasha, we are in the middle of the rainy season here in Florida. Is it okay to place the shredded mango on a cookie sheet in the oven on the lowest temperature to dry it? If so, for how long?

    Living in Canada has its disadvantages it’s cold now and we don’t get the sun everyday. So can I dry the mangoes in the oven and I have never seen mangoe done in a bowl I remember seeing it put into the pot with hot oil.
    How long would this last and must it be kept in the fridge or on the counter?

    I want to find out if it has to be in the Sun or could I put it in my furnace room where it is warm, does it need the sun or will the warm temperature do?

    Why do you have to put the jar in the sun, do you need the sun or can I put it in a warm place?

      James Singh well i. Trini it's tradition to put it in the su. to help it cure. You can leave it on your counter the mustard oil helps preserve it.

    put grated mango on a new pillow case and spindry .washing machine works for me .

    You didn't dry it completely, you didn't use preserving powder, you didn't cook it....
    It won't last more than a week tops, must grow mold after,
    I make mango kutchila and anchar, I know

      to be honest it didn't have the name but it's similar to a Glen Mango.

      Trini Cooking with Natasha hi Natasha!!! Thanks so much for this recipe. And especially the way that YOU did it. All the other videos I’ve found had you heating the oil but both my Nanee and my mother NEVER did it that way!! They did it EXACTLY like you did and it was THE most delicious kuchela everrrr (of course that’s an unfair statement because there was truly nothing my Mum & Gran couldn’t cook that wasn’t da bomb 🙈).
      For all y’all who’s saying this will spoil, y’all ever thought that maybe y’all hand bad or yuh jes cyah cook? 🤔 No, I suppose not, ppl with limited thinking won’t be able to 😑
      For the record, it does not spoil by making it this way 🤜🏼 🎤
