how to make mango kuchela

    for this delicious condiment called kuchela here in the Caribbean you can use green mango which is what I used or also you can also make it with pommecythere,green paw paw /papaya,green starfruit /five finger, even green apple 🍏 can be used
    it is firstly washed and dried then grated then salted and squeezed to get rid of most of the liquid or acid from the grated mangoes which then will sundried to dry out some more then mix with a few simple ingredients such as
    mustard oil
    green seasoning
    garlic, bandanya, pepper
    anchar masala
    roasted geera or cumin powder
    taste for salt add if needed
    make sure your kuchela is moist with the mustard oil if not when you full the cooled out kuchela in a glass bottle add a little on the top and cover you can also put it out in the bottle in the sun to heat up a little a little now and then it optional the old folks say it's like a natural preservatives and it adds heat

    In Guyana 🇬🇾 we call it Achar, long ago, the older folks use to put the oil and the Same ingredients and instead of frying it, put it in the hot sun for days to allow the seasonings to Infuse and you achieve the same results! Also, after finished frying it in the pan and bottling it, it is set in the sun for a few days to achieve that well done taste!

    VERY NICE BUT I DONT COOK MINE I AFTER MIXING THE MOSTARD OIL WITH THE MANGO I PLACE THE GARLIC AND GRIND PEPER ON TOP THE MIXED MANGO POUR HOT OIL THEN MIX WELL, EVERYONE HAS THEIR OWN TALENT AND TECHNIQUE WELL DONE,

      This was alot of greated mangoes to it depends on how much mango your using and it's an average of ingredients like peppers, garlic to your taste lol

      Thanks ❤️ after you freeze it you can take out and same way on the video because it don't get hard in the freezer it's stays like grated dry mango

      @@mercedesbeckles my oven has the pilot light on all the time and I no that can work like you can leave it there for a day or two not to sure how your oven works
