  • Some of my viewers have asked me to make healthy diabetes friendly meals. I've also had some viewers asking for meal prep on a budget, so in this video I'm meal prepping healthy breakfasts that I think would be suitable for those viewers for the entire week.

    Loved this video. I'm also prepping and eating for just me. My son shows up at least once a week and sharing a meal is easy because I usually prep two or three main dishes ahead and use those for lunch and dinner. Easy to heat up and share with him. My meal prep has become more focused now that I've completed my move back closer to my kids. I'm working on a second career degree so time and money definitely matter for the next few years.

    while carb balance taste good, the sucralose ie splenda in them, can cause sugar spikes in diabetic bloodsugars. I go for aunt millie's low carb breads, the sweetener in those doesn't mess up bloodsugars.

    Diabetics aim to hit 45 carbs or less per meal! And yes, we use TOTAL carbs not net carbs like keto people do. I laughed because those wraps you used are my absolute favorite! They taste good and last forever in the fridge. I personally think the low carb mission tortillas have a weird texture. But you did great!

      Thank you so much 😁 I'm on my lunch break from work (working from home today) and I literally just read your comment and got up and went to put my tortillas in the fridge. 😂 I figure I might as well be eating these from now on, since they have so much more nutrition than the others. Haven't tried the Mission low carb tortillas yet, although they did make it home with me. Have a great day!

      @@ArdentMichelle I have to say, I'm sometimes a bit perplexed by some comments from people under these kind of videos. I almost feel like there are different recommendations worldwide? I know quite a few people with type 2 who were never told to cut out all or most carbs? They eat pasta, rice, bread and potatoes. They aren't supposed to overdo it on sweets of course. If they want chocolate, it's best to pick a darker one (70%+) and if they want dessert, they should have it right after their main meal. What the recommendations are, is dependent on the severity of their diabetes. It almost feels like every diabetic in the US is told to cut out all or most carbs? Or maybe that's just my impression?

      My diabetic dietician said to use net carbs not total carbs. Interesting

      @@susanchoja6800 Same here. I had an interesting dilemma after my shunt as the dietitian and I tried to combine heart healthy and low carb. I'm type 1 diabetic. The heart healthy diet is high in carbs and low fat. I requested avocado be designated a vegetable and to allow corn and peas as carbs.

    Your sweet potato had slips not roots. If you cut them off at the surface of the sweetpotato, you can place them in rooting medium or transplant to a container garden or pass them to a friend who has garden space.

      I learned recently if you freeze your bread and toast it it helps with the glycemic index. Also if you cook and chill pasta same affect

    I was just thinking that perhaps for the egg muffin bites that maybe it would be helpful to seperate the egg whites from the yolks, whip the whites til firm peaks form, then fold the yolks into the egg whites before adding the other ingredients. Having increased the volume it may increase the number of muffin tins you could fill. This would also change the calories per egg muffin and stretch the budget further.

      Mix everything else together and THEN fold the whipped whites in. If you stir stuff into the whites you'll knock all the air out!

    Ty! I’m diabetic so this is perfect for me. I do go by net carbs but I also would have gone with the healthier tortillas. Can you do gluten free on a budget? Me being diabetic Ned him intolerant of gluten, our bill is so high

      I have had some requests for gluten free. 🤔 I'll see if I can plan an upcoming video. I'm sure it must cost a LOT to accommodate low carb and gluten free.

      @@ArdentMichelle The Aldi low carb high fiber tortillas are good. A little stiffer than Mission or Guerrero so it's best to heat them when you prepare food.. They also have more fiber than the other two and a bit cheaper

    Just make sure you don't mix up the Kibble and the garbonzos!! That would be bad! The cheese ball container is not very airtight, the pintos wouldn't stay as fresh. You can get 3 gallon buckets from the bakery for free sometimes. Mine charges $1 for the bucket and lid. Great closet storage for bulk rice and beans. Yet another great vid!

      @@ArdentMichelle I realize I didn't mention that I get my buckets from the bakery at my local grocery store. I also meant to ask you if your Dollar Tree has tofu? I'm seeing videos with people using DT tofu, but mine doesn't have it yet. I'm impatiently waiting!

    Mission has small sun dried tomato tortillas, each 7 carbs and I think 25 calories. These are small.

    Michelle. You are amazing and have taught me so much about beans and veggies. I am a 59 year old grandma of 10 and have been married 40 years in Jan. To a man that only likes corn and ice berg lettuce. So I didn't have much experience with cooking and adding veggies. I, like you at one time put all my taco stuff back in the fridge because I didn't have taco seasoning . Lol I told my husband if he goes 1st the header on my dating profile will be MUST LOVE ONIONS!     A diabetic educator taught me that if a serving has 5 grams fiber, you can subtract the grams of fiber from the total grams of carb. This is to determine injected insulin dosage to counteract the effect carbs have on blood sugar.

    Thanks for doing a video like this, my spouse is pre diabetic and we have to watch their carbs and sugars (their doctor allows them 135-180 carbs a day & 25-50 g of sugar 👍)❤

      Hi Mimi 😁 You're welcome 👍 It is definitely more challenging to eat on a budget when it's low carb. Hopefully you can pick out meals from my weekly challenges that work for you. For example, the pozole soup I made this week is low carb and the chicken recipe would also work for you as long as it is served with a salad instead of the mashed potatoes. You could skip the honey in the sauce or use a low sugar alternative. I bet it would be great without though. Thanks for watching! 🥰

      Glad you like this video. 😁 All of my videos focus on very low budgets and many are meatless meals. I would love to do more low carb themed videos but they just don't work on my channel, so instead I have some lower carb meals interspersed throughout my videos.

      Only the ones from SamsClub last that long. Their fruit and veggies really last! The only thing that I seem to be having problem with is their organic bagged broccoli. It almost goes bad by the time I'm to the bottom of the bag....and I eat a LOT of broccoli. The fruit and veggies I get at Wholesome Choice doesn't last very long at all.

    Great video, always played so beautifully! I think these meals would also be a great lunch/dinner substitute, maybe with a side salad or steamed veggie. Wouldnt add much to total cost. Maybe $2.50 for a meal is amazing!!

    I can’t wait to try the sausage and sweet potato hash. I am allergic to eggs and I struggle with breakfast because I’ve been “trained” to think
    Eggs are the only savory breakfast.. but really I guess I could eat anything leftover as breakfast..

      Look into breakfast hashes. I’m allergic to eggs also and now do savory hashes. There is a apple,ground turkey sweet potato hash that is amazing

      Glad you liked this recipe. I don't LOVE eggs. 😂 You could also make a hash with scrambled tofu. It's delicious with seasonings. My son makes a great breakfast hash using tofu. He cooks for me a lot. 😂

    I go by 15g = 1 carb. Allowed 15 carb a day

      Wow. 15 carbs a day. That is not very many carbs. ☹️ Are you counting carbs in vegetables like broccoli and tomatoes, and celery? I would like to get better at eating lower carb though because I feel like it's healthier.

    The American Diabetes Association says for Type 2 diabetics, women 30-45 grams of carbs per meal. Men 45-60 grams of carbs. They also say if you don’t want to count carbs, do the plate method: for a 9 1/2” plate, fill 1/2 plate with non-starchy vegetables. Divide the other 1/2 plate into 2, with 1 part being protein and 1 part being starchy carb. (Info available on the ADA website).

    Thank you for another great video! Food looked amazing as always. My Mother in Law is addicted to the egg bites from Starbucks, so I will most definitely make these! I had looked into it in the past but decided it was too much hassle - the recipe I had required the use of a silicone mold and an instant pot; I have neither, so I prefer your method!

      Yes!!! 👍 Make them because they are so easy! I love making the egg bites with green chiles and cheddar also. The frozen peppers and onions mix are also delicious. This morning I threw some egg bites in a wholewheat tortilla along with a little sharp cheddar and La Victoria sauce and it was good like that. I haven't tried the ones at Starbucks. Do you know what kind she likes? I would like to try. 😂

    I loved this video! ❤️I want to say thank you for extending your recipes to include those of us that eat healthy and organic (tons of food allergies here), and I know it is more expensive, but you did a great job of making healthy, homemade food! Btw, I can only tolerate rice bread, it’s now $8 per loaf! 🙄 Ive taken to eating less bread, more rice. It’s very hard to find gluten free flour (no nuts) right now. I am Going to have to get more creative. I hope you can periodically fit healthy budget recipes like this on your channel. Great content😊

I found the Ezekiel bread at Trader Joes this weekend for $4.50 as opposed to over $6 at Walmart. It's hard to get used to the new prices and what a good deal is now as compared to before. 😳.       Really? I haven't looked at the sodium on there. Maybe peel off the skin then? I would imagine it is all in the skin.

    That was slick, I would of tried to put the rest of the egg mixture in the muffin tin but you made another meal. It sounds stupid but never thought about that, potentially that could be another lunch for my husband. Thanks again.

      Thanks so much. 😁 I've also chopped up the muffins and put those in a burrito before. It makes for a quick breakfast when the egg bites are already in the freezer and you just heat them in the toaster oven and then top with cheese and a tortilla. Glad you liked this video!     I've been making these mini frittatas for many years. They're great for using up leftover cooked vegetables. I even taught my elderly mum to make these in her microwave

      No I wouldn't keep chicken for a week. I would throw some in the freezer and then pull out before using.

      There is also a mustard shortage going on. What used to be full all the time, is looking sparse. They still have some regular mustard, but it’s the specialty ones like Dijon, German and whole grain mustards.

      😂 This is true...I've made a few sweets on my channel....though not many. Carbs are my sugar of choice ☹️ Although I have to say, if you can afford fruits, they make a delicious dessert. 😋

    fir diabetics its more about sugar content than carbs yes sugar is carbs but complex carbs like bread and pasta doesnt affect insulin production

      @@ArdentMichelle the information I’ve looked said between 20-90. There are many factors involved. In determining how many carb’s each diabetic person should consume. Anything lower than 50 is usually for weight loss.

      @@carmenwheatley7316 Ah, see, that makes more sense to me. I thought every person in the US had the same kind of rules, no matter the severity of their diabetes. That's the impression I got reading a lot of comments (not just on this video). My grandpa never counted carbs and he always stuck to all the rules. He avoided most sweets and cakes and such. He did occasionally eat some very specific treats that his doctor told him were okay. My dad doesn't count carbs either and doesn't have to test himself. He was also not told to cut out all or most carbs. He eats 'normal' main meals, just like my grandpa. His doctor tests him every couple of weeks and his numbers are just fine. He just has to watch his sweet intake. I know some others who follow stricter rules but their diabetes is usually more severe and their treatment plan is different and there's usually more medication involved. I even know some with type 2 who take no medication whatsoever because it's 'too mild' for that (according to their doctor) and don't really have to follow any specific rules with the exception of not overdoing it on sweets and such. Then there's the person who lost a significant amount of weight and also doesn't have to take anything anymore.

      @@EmmaHope88 Yes it’s also the type of carbs and a serving size, which is usually 1/2 cup. Like eating whole oats ( groats ), rice, quinoa, potatoes, beans. Which are complex carbs with fiber.

      @@carmenwheatley7316 I'm not in the US, so I was quite confused by some of the comments. Maybe there are some differences between countries. Who knows? It just sounded like everyone is being told to limit their carb intake, including all pasta and bread. Things that my relatives and our friends are permitted to eat. They tend to eat more than half a cup btw.
