To clarify the 是不是 structure, all you're doing is attaching 不(verb) to your verb, and when there is an auxiliary verb, it's the auxiliary verb that gets modified, not the main verb. So if the auxiliary verb is 要, it would become 要不要. (Of course, don't forget 有 is an exception and it uses 没 as the negator!)

Where are you hearing that? I’m quite confident in my pronunciation being very standard Mandarin, although in Chinese, the zh and r sound are in fact related and can sound similar.

So basically 吗 changes a sentence in Chinese to a question like how the Japanese か changes it to?
In fact, in spoken Chinese, you can achieve exactly the same effect by changing the tone of your voice, without even adding "吗".
I thought 人 was pronounced with an R sound, not a slight Zh sound, is this related to your dialect, or it something in mandarin universally?
