Unfortunately like most of us her recipe left when she passed. When I saw your grandma‘s recipe it was everything I remembered plus a little more. I made it last night I followed the recipe exactly how you explained it except I doubled it and eliminated the tyme. I prepared everything on the stove top but it got late so I decided to transfer the works into a crockpot. It was a amazing flavor and meat was so tender. Definetally will be making this again. Pounding the steaks is what we called Swissing in England. Yours looks absolutely amazing! Funny thing: I am from the South and when I lived in Austria before I knew the name’s origin, I cooked this for three friends of mine from Lucerne. I thought I was serving them a national dish, and they just looked at me like “we have never seen this before.“ But they adored it. And your recipe looks better than mine! But yes just as German chocolate cake is not German at all, I learned the hard way that Swiss Steak has nothing to do with Switzerland.

My mom used round steak cut into small steaks. She had the butcher tenderize twice then she would get home -flour, salt, pepper & use the edge of a small plate to tenderize once again.
Hi Angela! That's so awesome and the way lots of moms and grandmas did it! We sometimes have our butcher tenderize the steaks and they are SO TENDER!!! Swiss Steak when done right is so delicious!
Just made this and it’s in the oven. I had 2, 1 inch large plate sized chuck steaks that had great fine marbling. I did the flouring and pounding like you said. I think I used too much mirepoix because even those huge steaks were not just buried, or submerged but swimming in the mirepoix/sauce. I always get something wrong because I have trouble following recipes partly due to an old head injury and the other is dyslexia that seems to make it difficult for me to judge amounts and the other is a stubborn lifelong compulsion to make everything I cook large enough to feed an army that doesn’t live with me. Good thing I love leftovers! I think God forgot something when he made me. He forgot to give me a husband with lots of kids. Or maybe I missed the turnoff in life where I was supposed to cook for large crowds instead of becoming an RN. Who knows. At least no one will ever leave my table hungry or my house without leftovers!
