However tapioca took over the Asian market, marketed as 'tapioca sago' because of lower cost, but it's not the real thing
Yeah but tbh using sago/tapioca pearls is the main 'selling point' of this dessert. The texture from sago is what makes it fun and unique to eat, plus there isn't much sugar in those anyway so it actually just adds texture and volume to the dessert.
