    Ingredients:
    200g gluten free plain flour
    100g butter
    1 medium egg
    1/2 tsp xanthan gum
    1 tbsp milk
    30g icing sugar (if making sweet pastry)

    As a professional chef and a lover of pastry making a tart as always been Easy until I got some clients that are gluten-free after many attempts with different recipes I could not get the tart to be crispy and crumbly at the same time without falling to pieces after stumbling across this recipe I must say how simple it is but it works perfectly you Can honestly not tell the difference in the blind taste test it properly cooked between Luton and non-gluten with this top case I decided to go with a gluten-free baking flour that also contains some potato starch rice flour and normal gluten-free flour. Well done to the boy that put this video online it’s a double thumbs up from a professional chef very very good indeed and thank you it’s made my life very easy now 😀👍🏻🙏🏻

    HELLO OMG PETER I gasped when the video began playing because here I am, simply browsing TH-cam for a simple GF pastry recipe, and I click on this video and recognize your voice instantly from the Great British Bake-Off! My sister and I are really enjoying watching this season and seeing the beautiful bakes you’ve come up with. What better person to come across just just as I’m looking for a good recipe 🙂

    Hi Peter, I'm blown away by this beautiful pastry. After searching for a looooong time for a good recipe, I came across yours yesterday and made it for a quiche last night. It was outstanding!!! My partner, who owned a very successful cafe and 6 bakeries was also blown away and actually said he thought it may have been the best pastry he has EVER had! It baked beautifully with my quiche and warmed up just as beautifully today in the microwave and another piece in the oven. I'm so excited. Thankyou so much!!!!

    Congratulations and thank you Peter . Very well described covering all aspects BUT in simple clear terms ,and covering all possible hick ups it would seem . I will be definitely trying this as I love apple tart,pineapple tart and jam tart so I will be busy . I predict , given your youthfullness, you will go a long way . Once again thank you Peter

    Thank you. I will use this recipe I find it's easier to roll the pastery on greese proof paper & the cling film from chilling on top of the pastery while rolling it out. Put the greese proof paper in the tin after rolling it out and the cling film for pushing down the sides. I discovered this while making a quiche. It's easier.

    What a great recipe! I’ve been doing a lot of baking and cooking during this pandemic. And I must say I have gone down the rabbit hole of TH-cam cooking videos. What I usually do is watch five or six videos and then I choose one that I feel makes sense for me and the ingredients that are here in my kitchen. I was looking for a pie crust for a strawberry pie. I did use another guys strawberry pie recipe but his crust recipe was too complicated and too time-consuming. So now you know what I did. Everybody loved the strawberry pie with your fabulous gluten-free piecrust! Greetings from California! The strawberries are sweet and plentiful.

    Love the video Peter, however, a quick tip would be that instead of using a knife to trim the pastry from the tin, simply roll the pin over the tin and press down and it will cut off the excess for you. Thanks

    Love this! Gluten free products cost so much in the UK and they are not readily available! Will be trying this today to make a quiche. Will let you know how it went 😊

      Peter Sawkins it worked!!! I am amazed how easy it was as I always thought you had to buy a hundred things that are not available in most stores! It definitely didn’t taste like normal pastry base but it’s not unpleasant at all I liked it thanks a lot!

      Zahra Lamin I’m glad you enjoyed it. You are right, gluten free flour does carry a flavour different to normal flour, but it still always goes down well, especially with people who can’t try the real stuff! Thanks for commenting and trying it out!

      Gluten free flour in UK is 2 pounds for 1 kg.Here in Bulgaria same flour cost 5 pounds.The difference is standart of life.Here minimum monthly payment is 240 pounds and biggest is 750 pounds.

    Love your video!! I would like to make a vegan version. Any idea of the egg substitute? Is it wise to increase the amount of xanthan gum to replace the egg? Thanks!

      @Jessica lau Maybe you could try a "flax egg": Combine 1 Tbsp flaxseed meal and 3 Tbsp water and let sit 5 minutes before using. This equals one egg. Hope this helps! :-)

    Great video but found rolling the pastry needed the grease proof paper sandwich approach when the rolling on a granite surface which was more inclined to bind with the pastry.

      Yes, the xanthan gum helps it and makes it easier to work with
