Nice one Rob, hey you're totally right man ..we work on so many different units that sometimes we forget , I was working on a 3 door traulsen freezer couple years ago , had the same issue, EL was reading 78 degrees conpressor wouldn't go into defrost, had to replace that evaporator temperature sensor, anyhow good fix brotha...

Great vid Dave! Not sure with Traulsen but some stuff here they disable the evap fan until the coil temp sensor says the coil is cool, but i have also had ones with intermittent evap fan relays too. Pretty much anything can go wrong in any conceivable way!
I have seen that b4. Some units are in energy saving mode and the Evap fan will cycle on and off regardless if the unit is in refrigeration and set point was met. if you call traulsen they will help you change the parameters. It work for me, hopefully it works for you.
another great job by nor cal....did you also check the cabinet sensor too? sometimes they go out of calibration and it keeps running & running till it freezes up even though coil sensor is good...I always replace both. keep up the good work.

Yes it can. 2.5 min EVAP fan delay in the logic. On those.

I changed door hinges on one today and then deiced it with hot water
