    04/17/23 = I just finished making my sofrito for the first time ever thanks to your GENUIS step by step demonstration video including the saran wrap and ice cube trays..... You are BRILLIANT and my sofrito came out PERFECT!!!!!!!!!! yeh!!!!!!!!!! I am sooo grateful to you, Shay

    04/17/23 = I just want to say thank youuuuuuuuuuu for teaching me HOW to make sofrito and thanks to you I went and brought a food processor at Walmart and I am making my Sofrito right now, yeh!!!!!!!!!!!! thank you, thank you, thank you and what a BRILLIANT IDEA to put the sofrito in an ice cube tray, wow!!!!

    I place mine in trays as well but I wrapped mine individually in Saran Wrap and foil….seeing your bag you make way more than I do but it’s just me. Next time I’ll just place them in smaller bag without wrapping too much work. I used to keep a jar in refrigerator but I noticed in this refrigerator it went bad, didn’t have this issue with previous refrigerator and if I increase temp vegetables freeze. So freezer it is. Thanks!

    I absolutely LOVE your videos. They are so inspiring and a pleasure to watch. I noticed when you did the introduction to the Sofrito recipe you said you played around with it for a little while and you got it to the way you like it for that time, have you reinvented a new way of making it now or do you still use the same recipe?

    I finally got around to making some sofrito your style! Lol! And boy… it’s delicious!!! My whole house smells like I’ve been cooking all day! Lol! And all I made was rice😂 Even my next door neighbor was like what’s that delicious smell coming out your house? Can I have some? Lol!!!! Well thanks for sharing. Please don’t stop posting 🥰

    Why the orange and lemon. Please explain how does it affect flavor. Very interested.

    This looks similar to green seasoning used in the Caribbean. Just wondering, do you ever use this to garnish meats?

    Nice! Looks good! Your sofrito is similar to Trinidadian green seasoning. We freeze them in ice trays as well and use it for the base for many of our dishes!

    Why is the acidity of an orange and lemon needed? Are those flavors reflected in the final product or when added to arroz con gandules or when condimenting a pernil?

      Absolutely! There are four elements to good cooking, salt, fat, acid, and heat. Although its a small amount, the acidity in any dish helps to highlight, heighten, & balance flavors, which brings everything together at the end. Thanks for watching!
