I've been making meatballs for my spaghetti & meatballs for 50 yrs. I like adding bread, eggs, and a bit of milk because it tends to make the meatballs more tender. It also helps to stretch your meat out further.

Hey there Capt Cory sir! My father retired, Capt David Wallace Jr., was an excellent fisherman & cook! I have found memories of us kids in the evening going to the station visiting all the firemen & participating in their community events. Daddy's funeral was as if the US President was honored & being laid to rest - just outstanding! I shall never forget the wonderful "Fireman Family" lifestyle! Thank you sooo much for providing your great videos - I have thoroughly enjoyed & brought back very fond memories of yesteryear! Be Blessed 👍🏿🌹💕
Sorry about your father Ma'am. I met the firefighter in charge of Fort Polk post years ago over a few shots. I never had time to enjoy your state as I was working many hours, but intend to re-visit. Take care and sorry again about your father Ma'am. He obviously raised a good daughter!

Captain Coby this looks amazing. My mom made this when I was growing up. Now I’m going to make this meatball stew. Thank you for great seasonings and videos. KEEP THEM COMING.
Hey capt. Just finished eating . I followed the recipe perfectly besides i only have 4 mouths to feed so cut it down to 1/4 . I'm not a huge fan of jar roux BUT like yall said in the video when ppl don't have time or really dont know how to cook a homemade roux , i think jar roux is great . I think we both a agree a homemade roux is better . Besides that 2 thumbs up capt. Look forward to your next video .
I found that if my pan is heated on a slow flame, the roux will melt faster without water. Use a stainless steel cake icing spatula to keep the roux moving. Once the roux is mostly melted add water very slowly while stirring until roux cools to below boiling point. Then add water slowly to keep up temperature. This procedure, I found, keeps the roux from foaming.
Good to know I’ll try that!! I usually make my own roux! We shot two videos that day so it made it easier on us to do the jar roux! I usually turn that lid on the pot so that roux can breathe and usually keeps it from foaming over!!
Im the old boy at work ( seasoned plumber) , i like to bring in crock pot meals for the young men, especially on labor intensive days, to help build up spirits. I will be incorporating this meal in, looks absolutely delicious! Thanks gents.

Never in my life have I seen roux-in-a-jar.
There’s a ton of it here in Louisiana! @randymousley1427 I do prefer to make my own but sometimes you have to deviate! Thanks for watching
How do you make roux ? Im from the north raised to cook like in the south
I have a video on how to make roux! It should be step by step! @marywinter809 please try them both and let me know how that turns out!!
This here ‘Yankee’(ya’ll made this boy at six go crying to his daddy calling me this) summered in Layayette. Is this a winter meal?
I call this your winter season rainy season.
Go Rajun Cajuns!
What up Yankee!! @robertklamm6727 lol that’s a Tuesday meal!! They sell meatball stew on Tuesdays in Louisiana year round!!
First time I've seen your show, and I enjoyed it. However, someone needs to teach Capt. Colby how to safely to chop an onion! When I watched him do it, I just knew he was going to take off the tips of his fingers! Man, learn to curl those knuckles back in!
Lmao @kylemoppert I’ve cut um before! I would love to learn how to curl them knuckles! Thanks for watching and commenting! Keep cooking and I’ll see you in the kitchen
I was the same way --- I *totally* cringed while watching him.
I'm *soooo* glad he didn't end up seasoning his onyons wit' blood!
You got a new Sub
Thank you @j.l8531 I hope you enjoy the Chanel

I didn't see you turn the oven off, we don't want to burn the firehouse down.
lol @Ridgerunner5 I don’t want to burn it down either!! I get in enough trouble! Lmao thanks for watching and commenting
Why don't you add water to the roux jar and microwave it to make it easier to spoon out. Or add water and insert an immersion blender. Just a thought.
Well it’s easy to do that when you are using the whole jar like we did here @crmbaker but when you only need a little bit that spoon comes in pretty handy! Thanks for watching
I can smell this video
Thank you@kevinkirkley it tasted even better than it smelled!!
The only thing I would have changed......two gallons of beer instead of water! 🤣
lol that would probably be delicious! Thanks for commenting
You're making New England's meatballs with onion gravy, just with a lot of spices from your neck of the woods.
Never heard of that but I’ll take your word for it! @andrewholleman thanks for watching bro!
NEVER put a cover on boiling roux!!! I see the Roux tracks on the outside of the pot...💯💯🤣🤣😰😰
lol @brettbrignac7591 that was my fault too I covered it to do a segment in the video and it didn’t take long to overflow!!
They should call it whistle stew
I almost scared to ask but why whistle stew?
How do I get your shirt?
I do not have the shirts up on the website just yet but it won’t be long placing an order in about a week! @Tocomaco thanks for watching and keep an Eye out for the shirts @captaincobys.com
It's sad that you don't give the spices!I'm not going to buy your mix...if we don't live in Louisiana it's difficult to find the mix.
Thank you for watching @kathleencovington3110 you can find my seasoning at Captaincobys.com I have 3 different blends and I even pay shipping for you!! Try it out I promise you will not be disappointed!!
food is good, but I really like the music and accents!!
Thank you @brianjones7660 and thank you for watching and commenting

Taste nothing like Salisbury steak! Infact this taste 1000 times better than salisbury steak! Thanks for watching! And commenting
That was a 16oz jar, right?
That was the big Jar @ZeRowe 32oz!
Hello where can I find that pot?
Found it lol
I get all my pots and cookware at Gary Matte in Rayne Louisiana
Perfect! Get to cooking!! Lol
We make our Roux homemade this way we don’t measure nothing in Louisiana go by the eye and taste
I usually make mine as well! And I agree i usually don’t measure much either! Thanks for watching and commenting
Aluminum cookware is not good for your health. I do have roux in the jar in my house...good stuff a great time saver.
Thank you @sin46ned always good to have a jar of roux in the fridge! Thank you for watching
If you use good chop meat not crap from the store with all the chemicals in it. Get it from a butcher we have a longhorn beef farm Longhorn beef does not shrink when cooked it’s very lean super high in protein super low in fat.
Well not sure if I ever had Longhorn beef? But thank for the great information and thank you for watching!@andykminek443
What town what department??
Lafayette Fire Dept in Lafayette, Louisiana @jimmieburleigh9549 thanks for watching

@@jimmieburleigh9549 I figured you were either from South Louisiana or had family down here with the last name of Burleigh. How’d you meatball stew turn out?
@@captaincobyscajuncooking6144 turned out good.. brought back some great memories of my late mother and grandmother
@@jimmieburleigh9549 awesome brother thanks for watching the videos!!
Protein extract makes the firm meatball.
Thank you @chrisdroblyn and thanks for watching
Where is the bell pepper? Celery? Garlic? And adding them raw to dem meatballs? You sauté those vegetables first! My maw maw just turned over in her grave! Where is da bay leaf? Jarred roux is ok! But you crumble it first! You don’t spoon dat in the pot! You add crumbled jarred roux, Cher! 6.5! 😘
I put onions and belle pepper and garlic in my meatballs @melvinatkins998 but Quinton like only onions! Just a different way of cooking it!! It still came out awesome! Thanks for watching and responding!
where is the ingredients pls
We always give a list of ingredients orally at the beginning of the video @michaellemons5020 but I’ll work on writing a list of ingredients in the caption
roux in a jar, aint that something
lol yes it is! @ patpeterson7645 thank you for watching!
Dang, looks good but common sense isn't their forte
lol thanks for watching @SupaNami
At least use Kary's roux.
I like Kary’s too! I really rather make my own but sometimes you just gotta keep things simple!! @cjr4497 thanks for watching
To much talking omg
Lmao! I agree we do talk a lot! @twonferrell8774 thanks for watching anyway!
It's Cajun folks. Lol friendly people. That's how they are. 🤷🏻♀️
PS, you can speed it up in your settings. Just fyi
Talk too much.
lol @Mikeabq1 that we do! Thanks for watching!
@@captaincobyscajuncooking6144don't want you to worry or fret about that. Let them say what they may. I grew up as a military brat, home was wherever my daddy was stationed UNTIL he got to Houma. To this day, even though I'm not in LA anymore, I still call it home and go back every chance I get. I miss the people, their voices and the food. Thank you for my "happiness fix."
@@childofgod3675 my pleasure brother! Louisiana is special!!! Thanks for watching and commenting!! Keep cooking and I’ll see you on the kitchen
Better know what you’re talking about before you start talking about it. The protein in the lean bind together to stiffen the mix. Fat has nothing to do with it. Fat breaks down and leaves the mix. Please stop spreading misinformation and have some knowledge about what you’re talking about.
Fat leaves the mix??? So just cook meat and all the fat leaves??
@@captaincobyscajuncooking6144no sir it does not leave that dude😅 don’t know wtf he’s talking bout!
@@rustyfan89 I didn’t know people were that passionate about the binding of meat!! 😂 lol
@@captaincobyscajuncooking6144😂
wrong buddy
I love that pot man I need one lol!
You can find them online @patrickbaron6921 they pricey but they well worth it!!
In Mexico 🇲🇽 it’s called ABONDIGAS 😅👍🏽
That’s awesome I never heard of Meatball stew outside of Louisiana but that doesn’t surprise me @daviddelavellano9242 Mexicans and Cajuns cook a lot of the same things just in a different way!! Thanks for watching and commenting
What kind of roaster is that? Where can i get one ?
That is a 18 inch McWare aluminum roaster! @PEPPERJET7 not sure where your from but I get all my cookware at Gary Matte Hardware in Rayne, Louisiana
So basically you made hamburger stew. And used hamburger meat balls versus just ground burger like we used to can back home. Kewl
We use 80/20 ground chuck! @clintjohnson702 it’s not the greatest meat but it ain’t bad either!!
Swedish meatballs pretty much. Just added cajun seasoning.
@@ryana4419 pretty much
