  • Chickpeas with zucchini are better than meat. You have to try this zucchini recipe with chickpeas because I could eat it all summer long!     📋 INGREDIENTS:
    • 2 medium-sized zucchini
    • 1 red bell pepper
    • 1 red onion
    • 250 g chickpeas (about 1 cup)
    • 2 tbsp olive oil
    • Lemon juice (from 1 lemon)
    • Zest of 1/2 lemon
    • 2 garlic cloves, finely chopped
    • 1 tsp oregano
    • 1 tsp salt
    • Freshly ground black pepper
    • Fresh parsley, chopped (for garnish)
    For the dressing:
    • 3 tbsp olive oil
    • 2 tbsp lemon juice
    • 1 tsp mustard
    • 1 tsp agave syrup or maple syrup
    • Salt, to taste
    • Chili flakes, to taste

    Preheat the oven to 200°C (392°F) and bake the vegetables for about 20-25 minutes, until the zucchini is soft and lightly browned.
