Quick Chili Cheese Omelette Recipe - Dash Mini Bundt Maker!

  • Individual baked omelette / frittata using a Dash Mini Bundt Maker. Off-grid cooking with a Portable Power Station Solar Generator. This is low power wattage and low energy cooking! Recipe Below! Great for camping breakfast!

    Recipe:
    Ingredients of your choice chopped small;
    Carrots, Bell Pepper, Onion, Cheese, Bacon, Potato, Cilantro
    1.5 to 2 eggs, beaten with 1 tsp milk
    Chili and hot sauce for topping
    Pre-heat Dash Mini Bundt; add minimal oil if needed (only needed every 3ish times - best to brush on)
    Add potato or zucchini slices on the bottom
    Then add carrot, bell pepper, onion, cheese, cilantro
    Fill the bundt maker with beaten egg to just below the top of the bottom cup
    Cook until done and no longer runny. One may need to poke the omelette several times as the interior cooks.
    Remove and add your favorite toppings like chili, hot sauce, salsa!
    Note: The first omelette will take a bit longer and more energy as the bundt maker will need to pre-heat.
    The first omelette to cook took 7 minutes active cook time, 11 minutes total time; 39 Watt-hours were used. Subsequent omelettes will take less time and energy as the unit will be thoroughly heated.
    Note: Broccoli, Cauliflower, corn, etc all work great - use of those bits of leftovers! Use your leftover camp chili on the side - it is a great combination!

    Hi Katy; looks good. I don't have the bundt cooker but it seems like I've got most of the others. On a side note: I did try to put brownie mix in the waffle maker and it was a bust. Not cooked in the middle and burnt on the edges.

      I have to say that the Bundt is by far my most used one. I make Cornbread in it also at the same time as in the pie maker. I am thinking of buying another just for my camper kitchen that stays in it permanently with the pots, pans and silverware
      I wish the brownie mix had worked in the waffle maker!

      The Bundt is my most used one by far. When making cornbread, I usually run them both.

    I want to boil water in my van house. I have two EcoFlow Rivers. What appliances can you recommend to boil water? It's just one person and I don't want the appliance to take up a lot of space. Thank you!

      Funny you should ask - I have this in my list of videos coming out in July (I have often wondered if people would be interested in this topic). I am not done with it yet, or I would link it to you....
      For a stand alone small electric kettle, I would recommend the Stoke Voltaics Joulle - it needs 500Watts to run and it brings about 2 cups of water to a full boil in 5-6 minutes. They are pricey but really work and are very sturdy. You can also heat food in them. They often have a promotion (or two) with them, where they add in some extra items - presently they have a free stirring stick with them. Just look for the extra savings orange rectangle and click on that to add the stirring rod for free. Here is an (affiliate) link: amzn.to/4bI6Frf - I have been using mine for about a year and really like it. It really works. For cleaning out food, I just use a bottle brush. More often, I just heat the water and add it to a cup with my coffee or Ramen, etc.
      For boiling larger amounts of water, I have also used a nuwave induction cooktop with a saucepan to heat water - I showed this in this video:

      This works really well if you have enough power - I have used it with a Bluetti EB3A that has a 600 Watt inverter. You will need an induction compatible saucepan - a magnet should stick to the bottom). Here is my favorite little saucepan: amzn.to/3wZ5qoq (affiliate link). That saucepan also has a built in strainer on the lid and fits into a small space because the handle is compact. You can see me using the saucepan and induction cooktop in the macaroni video that is a few videos back.
      There are a couple of other products that I am waiting for, that will be part of the test. One is a 12 ounce water heater that holds 12 ounces and the other is one of the old fashioned coils. I haven’t tested these yet, but provided affiliate links to them, so you can see what I am trying. If I remember correctly, they run on less power and may work better for you.
