I’ve been doing this tech with Joker for a while now. It helps specifically with fair one up air combos since you can reliably get all four hits of it more consistently imo. I’m not really sure about Sheik, but I think you can replace almost all of your short hop up airs with this method for more consistent combos in general

I was practicing sheik today and I didn't even realize I was doing this when practicing ftilt upair loops lol. Definitely gonna try to utilize it more with these different combos if I commit to the character!
Not sure if it’s new tech but I just figured out you can use grab to dair out of footstool giving you a buffered air dodge if you miss or the dair if you hit.
not sure how applicable it is with di and defensive options, but i did some messing around with it. i was able to hit f tilt/d tilt > slow fall up air > up smash on characters with similar fall speed to steve at about 90%. again, i didn't test with mashing jump or air dodge or any di so it might not be true at all, but i thought it would be a fun idea to entertain
You are correct, it is essentially fast-falling after the third hit. Now let me explain why that wasn't obvious for a long time. If you'd try to let them fall down slowly from a dragdown at low percent you simply will not be able to combo because they can act before they hit the ground. Because of this, the reliable method for dragdowns for years has been to get them down to the ground as quickly as possible and for all dragdown applications this method has always done it's job. There was never really a reason to look anywhere else, and since letting them fall early was known to be "bad" from labbing at early percent, no one bothered to experiment with it. What makes this inventive is that it defies the basic intuitions you pick up when you first experiment with dragdowns. Kudos to Void!
Btw this is also applicable with Joker, but you need to get the 4th hit, not the 3rd, and it only helps on certain characters, or when doing the infinite. It’s not something you need to know with him unlike Sheik, but it can definitely be useful!

I assume in this case, the upair will combo at slightly later percents compared to ffua? Since they don’t necessarily have the landing lag, they need enough hitstun to allow you to throw something new out. Or, is the hitstun consistent with regular ffua?
What could be possible if you do this from under a plat, then drag them onto the plat? I wonder if you could do the other half of a raindrop. Or U-tilt, or f-tilt, or rar backair, etc... I have no idea, but it seems like an interesting and odd situation you force your opponent into, and imo unfamiliar
Just to confirm that I understand it, is the difference from standard ffua that you start the up air before the peak of your jump, versus delaying until the peak of your jump for a normal one? So you’re still fast falling before the 4th hit, but you’re just higher in the air because the aerial started sooner?
The key difference is fast-falling after the third hit, rather than after the second. You can start the up-air sooner because you don't have to fast-fall as early (you can only FF once you reached the apex of your jump).

Yeah the usual tech has been to input the uair at the peak of your shorthop. Now it seems it's actually way better to input the uair as you're rising, but not buffered with shorthop.
Note that both the usual fast falling up air and slow fall up air have their uses - the usual fast fall up air has much more frame advantage so only that one will ever combo into fsmash, or upsmash on a platform without rage. But at higher percents or with more rage when you dont need the extra hitstun then slow fall up air lets you hit dragdowns in more scenarios and keep them in the air which is sometimes better
