    100g / 3½oz Goose fat or Beef Dripping or Lard or Vegetable oil
    Coarse sea salt and black pepper to taste

    Just a little tip for you John and anyone else watching. When you boil anything, add a small knob of butter to the water. It'll prevent the water from bubbling over. Also I add a spoon full of flour over the tats. It dries them out and gives it more of a deep fried crisp. Works fine without though!

      2:06 Gasp! Hi John, IF you don't add salt when boiling potatoes, eggs, whatever veggies... you CAN save the water, let it cool and use it to water plants (indoor or outdoor). Any and all waters will add beneficial feeding to plants and / or soil. Just a great cost savings thought.
      Add salt and the water will very much harm plants, so do NOT reuse on plants.

    Perfectly presented 'gentle John', you have a nice easy way with food and an experienced and knowledgeable method of presentation that includes kitchen hygiene which is so often left out. I do my roast tatties this way altough I only use goose fat on Christmas as a treat, and as an added twist courtesy of young Mr Oliver, I give them a gentle squeeze half way thorugh their time in the oven giving more surface area to roast. Perfectly crunchy roasties every time. Merry Christmas everyone.

      That's exactly how I roast my potatoes, being vegetarian I use sunflower oil. Maris Piper are great spuds and make wonderful home cooked chips.

    Made these for dinner tonight with some slow cooked beef and other veggies. Very nice indeed. I had never roasted spuds like this before. I used lard, I think beef tallow or dripping would be better for sure, but it was still amazing! Thanks John 💜

    Tried this over xmas 2019 and a few times since. Simple recipe by JK but the best roast potato and easiest to follow. I used veg oil and plain old white potatoes but they came out lovely, crisp on outside and fluffy yummy in the middle. Thank you JK.

    Oh! They’re quite big! I was thinking they’d be in 1”/2.5cm rough cubes, so more like 6 pieces per potato. Looks lovely! I’ve known goose fat was traditional for a few years now, but this year is the first time I’ve seen goose fat available in regular grocery stores. The only time I’d seen it before was in an import cheese shop run by British ex-pats.

    I made these last night-Dec 2021- they turned out delicious- I used olive oil in pan and cut back the amount to about 75g.- My new "go to" for oven baked potatoes- I never could get oven baked chips to my satisfaction , but these are fantastic- better than chips in the oven- Thank you for this recipe

    I drain the water from the par-boiled potatoes, put the lid on and give them a good shake. Some may brake up a bit as this is quite a rough way of doing it, but I still put these bits into the roasting pan which then come out like little potatoe "scratchings".
    Now take them out again half was through the roast, turn them over and, with a mashing tool or something similar, squash the spuds slightly to crack them. Then baste, and put them back into the oven.
    The result is a more crunchy roast potatoes that holds the gravy more effectively and is absolutely delicious.

    Mirror image of how I roast spuds apart from I take them out of the oven 2 or 3 times and coat them with oil again. A splendid video!

    Thank you for sharing your roasted potatoes recipe. I tried them tonight for our New Years Day dinner. I needed them as a special treat for my Mum & Dad. I actually ended up using your other recommend method of covering potatoes in oil - on account I was skittish about baking in the oil. They turned out very well. Mum & Dad were best pleased. Now I can make them again...as a treat for me! God Bless.

      When I have a goose, maybe once a year in November on MARTIN'sTag , 11th NOVEMBER, I always keep the fat and put it in a jar with lid into the fridge !!!! It is so delicious for frying or when you cook the spicy red cabbage, a tablespoon full of it goes in, makes the cabbage shiny.

    Hello from Texas! I made these today...so yummy! It's unfortunate we don't have all those potatoes varieties you all have across the pond. I used red potatoes and goose fat (had to order online a while back since you can't find them-or beef drippings, in grocery stores)

    That is brilliant, John. That’s a great way to roast potatoes. The goose fat is very decadent! Just fyi Yukon gold are waxy potatoes similar to red potatoes while Idaho russets and Maine potatoes are mealy potatoes. It looks like you are using a mealy potato.

    I've done a taste test. Putting the potatoes in when the oil is hot doesn't add anything other than burns on your wrists and a dirty hob. I now just let it stand a bit. Great video as always, rock star!

    Perfect...... Absolutely perfect - I have made them before with goose fat and they have come out beautifully cooked, but never tried making them using beef dripping. Thanks for the heads up John. I may give them a go with the dripping. Excellent video as always

    John Yukon gold potatoes are waxy type and Russets are starchy of the two I prefer yukons but they are pricey so I buy baking russets because they are larger. You just can't beat a good roasty all crispy crunchy with a Sunday roast, carrot and turnips, mushy peas, yorkshires and gravy. 👍😍😊

      Thanks Brenda. I have the opposite problem when following US recipies. Maris Piper has always been my choice for roasties (floury rather than waxy), but finally knowing that yukon=waxy and russet=floury is a great tip 👍

    I use duck fat for my roasties (cause goose fat makes my innards do somersaults). No need to worry about the cost of goose or duck fat though because when you have finished making your roast potatoes, take 1 piece of kitchen paper and line a sieve with it, then pass the used (hot) duck/goose fat through it to filter the bits out. Catch the filtered fat in a dish and you will be amazed how clean it is. Then refrigerate and re-use as you wish. You're welcome. 🥳

      Thanks Diane, yeah it's a good tool to use on heavy doughy recipes, as a pro chef I've used it most of my career (now retired), I find the spoon end really supports the wrist, someone should invent a dedicated tool.

    I'm back here to thank John for his wonderful method of cooking roast potatoes to perfection. I am about to use his method for the 3rd Christmas in a row and even bought his book in case his TH-cam channel ever disappeared. 😂 Oh and please buy is book it's better than all the other cookbooks I have due to the way he portrays his recipes.

    These are fantastic! I saw this recipe in the recipe book and then watched the video. I found jarred duck fat at Walmart (of all places!), so I used that. These are my new go to potatoes when guests come over. They’re pretty easy and the presentation is impressive. Thanks John!

    A Scottish friend uses this method except he used a deep fat fryer to finish them. So fluffy on the inside and crispy on the outside. Calls them Totties. Not sure if this is traditional Scottish fare but either way...Baked or deep fried....Soooo good!!
