For any jumps in volume. For distorted guitars you may only get that in a palm mute but if you have a player who is changing their tones throughout the set then it can make life easier by evening out all their different sounds.
Just setting it to catch the peaks slightly and do 1-2db of reduction on louder parts just to help hold them in place. They dont really need it but its just something i like to do and can just help balance any tones in the rig that are slightly louder.

They don't - it would only be an unprofessional/badly setup guitar rig for the changes in tone to be wildly different to each other.
