Yes. It's not perfect. Especially if the pdf file isn't so clear or uses a complex font type.

I scan my first doc, and it converted just as you described. Now, I am trying to convert the second scan doc but it converting like it is a photo. Do you have any idea as to why this is happening?

Maybe the text on the page(s) is not clear enough for the software to identify them. Make sure the scan is done well so you can clearly read the text.
