I have also helva shop in Türkiye and I'm 5th gen. It is so close how we make helva, we just use shovel at the start then switch back to hand. But your helva seems good cuz I see you don't break the fibers. Well done.
@@TonyKavalierosUS tysm good tip, I didn't know to add water to the boiling sugar Q: in the old days did they always use sugar as the sweatener? And liguid vanilla?
@@genkishan the original recipe has origine from the Byzantine, sugar in Greece came only after 1900, they were using honey to make halva but I suppose it got too expensive. Vanilla and spices were always available in Byzantine.
In this video he is using only sugar syrup that it is beaten using heat to look like a meringue, no eggs are used in the recipe, only sugar and tahini.
@@TonyKavalierosUS Hey Tony, it is not only sugar syrup. They also use soapwort extract in traditional Constantinople way. Thanks for this great video, pleasure to see the tradition is living just in the same in Greece. Regards from Istanbul :)

Tony
So in Greece is made with italian meringue O_o
I saw other recipes, in which they're using only a sugar syrup, without the egg white
In this video he is using only sugar syrup that it is beaten using heat to look like a meringue, no eggs are used in the recipe, only sugar and tahini.
@@TonyKavalierosUS looks like italian meringue to me, well accurate 😱
