Pierce the skin at the fat spots. Use nothing but salt and pepper or you steam it and mushy skin. Thomas Keller says never put anything in a roast or you steam it.

Matt, there were still feathers on that duck! 400 degrees is the temperature that I cook my duck on! I never heard of it being cooked on 170-180 degrees; for 1 hour and a half! The duck did look good minus the feathers! 😅
It takes roughly 2 and a quarter hours to cook a roast duck from frozen. Microwave frozen duck on high for 15 minutes to thaw it out, while doing that pre-heat the oven to 150 degrees Celsius / 302 degrees Fahrenheit. Cut the neck off, cut around the wings and pop them out from the shoulders, doing that would make the cooking process easier and would cook it evenly. Place the duck, its neck and wings in a well oiled baking dish, season it, rub some oil onto the seasonings and the skin and bake for 2 hours. Once baked the flesh should be tender and juicy. The bones, flesh that remain on the frame, the oil the duck was cooked in and the duck fat would make a pretty nice stock, boil it for a few hours, turn the heat off to let it set and scoop out the gunk on top.

Well at least you can put it back in, would've been worse the other way round :P But I agree, whenever you put a cooking video up you really should mention whether you're refering to C or Fahrenheit.

I was always taught never to wash raw poultry, just wash your hands after touching it.
