    I'm type 1 diabetic (61 years young) and rice is a daily staple, but always eaten hot straight after cooking and blood glucose always spiked. For the past 2 months I've been cooking batches and reheating daily due to time constraints, totally unaware of the mentioned benefits. My sugar levels have been much much lower and I've experienced many unexplainable lows which has baffled my local GP. We had to reduce the units of insulin I take twice a day.. This video showed up on my feed and curiosity made me watch. Looks like this could be the reason.

      Take vinegar(acetic acid) before consuming any starch to further blunt the blood sugar spike, or eat vegetables prior to the starch.

      Yes, u heard abt this a while ago but never research it deeply. I normally cook rice on Sundays and put in the fridge for the next 2 days. But u still eat rice hot. I have alot of digestive issues and I love white rice more than rice and peas (Jamaican) so I'm going to start doing this seriously now

    I could believe my eyes this morning after checking my blood glucose result after following Dr. Mandell's recipe for white rice. After eating a good portion of white rice for dinner, the result was 108 mg/dl or 6.0 mmol/L. Thank you, Dr. Mandell. May the Lord Almighty bless you. Amen.

    I did this to spaghetti the other day. I made it the day before and refrigerated it over night, then threw it in the pot with the meat and sauce the next day. And i was amazed! my body does not do well at all with pasta and potatoes usually skyrocketing my blood sugar up to around 200. With this I NEVER went above 130! Amazing.

    Another hack with rice is to lower the arsenic in the rice. To do that it's advised to begin cooking the rice in excess water, once it has come to a boil poor off and rinse then finish cooking with fresh water.

    Oh my goodness! I've been doing this for years without even knowing the benefits! People always ask me why I'm so lean and never gain weight.
    I batch cook a pot of rice once or twice a week and store it in an air tight glass container with a lid. I re-heat a portion of every day and eat it!
    I do the same with root vegetables and potatoes whenever I eat those as well, which is not daily. I'm currently not eating bread (by choice) but when, I did I always kept the entire loaf in the fridge.
    I'm going to show/forward this video to several loves ones in my life who could benefit from this information. Thank you Dr. Mandell, and God bless you!

I'm choosing to take a break from bread at this time because at one point I was getting to be too "lazy" with doing actually cooking, and wanted to ensure I included much more variety in my diet, including my choices of carbs. This is why they consist mostly of rice, quinoa, potatoes, and root vegetables. I particularly enjoyed rice because I can add lots of veggies to it as well...     I've been batch cooking long grain white rice and refrigerating it for over 20 years on a weekly bases. I only eat rice fresh off the stove once a week when I cook the weekly batch. I had no idea the refrigerated rice was better for you.

      @@ajgssa We often have reheateded cool rice thats been left covered and allowed to cool for hours, sometimes overnight. Never had any problems since eating reheated rice for 40+ years and none of my family or relatives have either. It all depends on how it was prepared and cooked. Any food can be potentially dangerous if prepared and stored incorrectly and eaten cold.

      I also freeze bread - only clean rye bread without nasty additives - put in the toaster it's so delicious. Only way we eat bread and in moderation. It also leads to resistant starch.

    I usually freeze mine. As soon as my rice cooks I put it on my container and freeze it while it is still hot. I learned this from my friend’s Korean grandmother. And when I need it I would just grab my portioned container and reheat it for 2.5 minutes and it’s ready. And it tastes just like freshly cooked rice to me. 😊

    We in Tamilnadu has this from ancient times and we call it Pazhudu that mean old ones. We cook rice and left over are stored over night in the pot with water, it ferments, we add buttermilk, onion and chilli and drink them after squashing the rice water and buttermilk mix with salt and drink it or eat like gravy. It does wonder to your body heat, gut health and energy level.

This habit of drinking the 'cooked-rice-soaked-in-water' is age old tradition and has been in practice even until late 1970s.. The local term for this meal itself is called "Pazhaya Soru" roughly meaning "Old meal".. As rightly stated elsewhere in this comments section, it provides the required stamina for the farm workers who toil on the fields and beats the hunger till noon.. Indian traditions are the best way of healthy life. We have medicines blended into our diets all along

      @@annmorgana2848 but be very careful we do not toil that much compared to farmers of old times so even though this is rich in gut bacteria it is also very very rich in calorie but to mitigate this reduce the rice intake but increase the water or buttermilk addition so you take more gut healthy bacteria and not calorie. Also keep the fermentation of rice in the oven with mild heat so fermentation is more because in Indian climate even the night temperature higher when compared to western temperature in night.

    I'm from a rice-eating country and eat rice 3 times, even for Breakfast with vegetables fish, and meats. but I lived in Europe and now in North America for almost 50 years, still eat rice twice a day. I feel it is easy to digest. I eat here mostly Basmati, but back in the soviet union eat Russian-grown rice from the south(Kuban, Krasnodar) and it was like Calrose-type rice. short and fat was tasty even than Basmati. Basmati tastes good if you add butter and some spice. I mastered a long time ago how to cook rice. A quick way is to cook in a shallow flat fry pan, although I have a rice cooker machine that takes twice the time of pan cooking. if you for example cook 2 cups of rice. wash them, then add 2 or 2 cups of water and boil it, check in the beginning not to stick to the bottom of the pan(use a flat wooden spatula to remove if stick at the bottom and when it boils(in 4-6min at medium-high. cook until the water on the top almost evaporated and cover the pan with a lid. and turn the gas or electrical 10-hour position(low) and wait or go to the computer and start work and don't forget to use the alarm or timer for 10min. I think the rice is ready. I read old and cold rice is not good for the stomach, so I kept them after eating first time on the bottom of the freeze/fridge inside the rice cooker pot or in a high-quality plastic or china pot. Then reheat cold rice and curries(veg, meat, chicken, and fish) and eat it again. it is good to cook at every meal, but not always possible. if you have many members, you can cook each time you eat. The rice cooker takes 40m, pan cooking around 15-20min. I am 68 and I had heart surgery due to a bad heart valve and blockage of renal and bifemoral arteries. so I had 2 surgeries, first heart, then after 4 years renal and bifemoral grafts. Everybody asked me when I went to the specialists how I was diabetic, I said that I never had it. they were surprised that I had all kinds of problems, but not diabetic. just in the last blood check my Hemoglobin A1C
    6.0(4.5-5.9) and one point high. I take a lot of medicine for my pressure and control my heartbeat (no other medicine for other diseases). But diabetics among South Asians is the highest in the world and I think is not for rice. Most diabetic and heart disease people live in India and among the Sikhs and Indians Fijians have the highest in Canada and England as I heard from heart and vascular surgeons. Most of the diabetic patients from the subcontinent eat too much sugary stuff, milk products(Indians). Chinese Japanese Vietnamese, Thai Koreans Malaysian Indonesian Filipinos eat 2-3 times eat rice and they are very healthy especially the east Asians.

    68 Y/O M, on a weight loss journey and lost 50 Lbs. as a pre diabetic with no complications. For over a year and a half, I've been on this plateau. Seeing my PCP, CRD and a RNP. Still no boost. Will give this a shot as it seems to have great benefit's along with current meal plans. Thanks.

    Thanks. We Srilankans rice is our staple diet. We cook them in clay pots. Mostly red rice. We add a little amount of water to leftover rice in the clay pot and keep it over night. In the morning we add finly choped red-onions green chilies coconut milk and lime juce and eat it emty stomach. It does wonders to your gut health gives instant relief for gastritis and all types of bowl related issues. Try it if you can.

    Thank you for this way and understanding more about rice. My daughter is diabetic and she refuses not to eat rice. And watching almost all your videos and that it makes me watch them all that I could, cause I learned so much from the things you know already and I’m learning from you. Here at home they like freshly cooked rice and so many left over. Left overs I refrigerate cause I’m the only one that eats it, didn’t want to waste food. So I’ll try and teach them hopefully they’d agree.

    I stop eaten rice before because of the bad rep. Now I enjoy my rice this way , but not without my raw sweet peppers (the yellows, red, green) and parsley so good. If you keep the veggies raw you will notice a great improvement in your general health.
    Besides i love a rainbow looking plate when i eat.

    I have always made up large batches of rice and after they cool, I fill up small containers of the rice and freeze it. I have noticed that once I reheat it, the rice no longer sticks together, making it more pleasant to eat. It might be my imagination but it seems to taste better when it is prepared this way too.

      How long should cooked rice be kept in the fridge? I was always told that bacteria grow quickly in rice & it shouldn't be kept for long or reheated. I also have a big container of rice in my fridge that I should have freezed so I'm wondering how long it would be ok for

      @liuj88 ... I use Basmati rice, let the rice cool down, before putting it into containers and freeze it. Every time I like to use it, I take a container out of freezer, let it diffrost, and heat it in the microwave. I have been doing it for many years now. I wash rice thoroughly before cooking, put rice into the rice cooker, and add water, salt, and a table spoon of olive oil. It's never clumping.

      @@liuj88 I do fluff it as soon as it cools while in the rice cooker. When it is totally cool, I put it in small containers. I equally use glass, plastic containers and plastic bags, depending upon what I have in hand. I do fill them completely, then I cover it with plastic wrap before sealing in the container. If it is a plastic bag, I make sure to get as much air out as possible before sealing. Then I make sure they lie flat in the freezer. They reheat fast and because the rice is no longer sticky, it is easy to fluff. I use whole grain only. To answer your question, even though I fluff it before freezing, I pack it down slightly while filling the container. I have done it this way for decades.

      I can attest to this- I've been inadvertently doing this for years, because I batch cook most of my meals to save time.
      The rice is cooled on the counter in a large glass container for 30 minutes, and chilled in the fridge with an air tight lid. I re-heat and consume a portion of it every day!
      Everyone always asks me why I'm so lean and never gain weight. This very well could be a contributing factor... and all I was trying to do was save time when doing food preparation and cooking! 😂

    After spending time exploring Asia and Pacific Rim areas since 18 I’m a rice eating fool….chopsticks and all.
    Burn it because of activities like walking,exercise,hiking,backpacking,etc..
    I do refrigerate rice at home because I cook a lot at one time to reheat later especially during winter.
    I will cook a batch today.

    Good to hear! For years as part of my weight management routine I've eliminated or minimised pasta, rice, bread, potatoes and rice. However, every now and then I put some of the family's left-over rice from the fridge made a day or two before to help "fill up" the soup or whatever else I've prepared ...... with a little guilt attached! However, now I won't feel too bad about it.
    I guess though, everything in moderation, yeah? - I'm assuming the good Dr isn't suggesting we all go on a 24-hour rice binge every day 😁

    I keep most of my bread in the freezer like Ezekiel Bread that is in the freezer section at the store. I eat rice and beans a lot and also cook the rice differently to reduce the arsenic in it as well. Info online about changing the water when cooking, same with beans in reducing the sugars and adding some herbs/spices for gas.

    I make soup in my pressure cooker. I put rice is the bottom (hotter), along with veggies and chopped sprouts. cook about 14 min. at high pressure. Add cooked meat after cooking. Put in frig, and sometimes eat some of it cold.
