I made a graf (hybrid between cider and beer) and the fermentation stalled. I didn't know whether it stalled or if it was the FG. I went ahead, added priming sugar and bottled. 3 weeks later, not a single bubble so...yup the fermentation stalled. I took one again a couple of month later and there was some carbonation. Now the last bottles are very fizzy and I actually have to drink them to not get bottle bomb. Be aware that it might happen in your brew! Best way to check is to try regularly (life's tough I know :) )
On thing I learned doing wild wines, ALWAYS ALWAYS ALWAYS hit wild yeast with Yeast nutrient and Yeast Energizer. They tend to be a bit on the "weak" side for yeasts so they do well with the help. I totally get the going ALL natural tho.
Looks like a really cool recipe, I'll definitely be trying something similar. Also, I think saving the yeast is a great idea; hope we can see your process for doing so (and the mead it creates) soon! Keep up the good work, man!
Minor nitpick from early in the video: synthetic yeasts aren't available. Actually, even genetically engineered yeasts are quite uncommon in the brewing world, although some do exist. Practically every yeast strain you can buy was developed from a wild strain just by isolation and selective reproduction.
I would be a little leary about using snow. It forms around tiny dust particles and nasty bits in the air. Hope none of it was yellow snow. I've been following you since you started and I applaud your boldness in making meads. Currently, I'm experimenting with making hopped meads using various hop varieties. Tasty stuff.
Put priming sugar into a mead that's not been stabilized (and can still ferment), and then bottle it! Or you can stabilize a mead and then put it in a kegging system and force carbonate it!
I'm planning to do a wild fermentation when some local honey is in season, so this was very cool. But I would have liked to see more about the wild yeast side flavour wise. The video didn't really touch on it. Did it add any flavour that you would not have expected from a wine yeast? Is it funkier or got any brett flavour?
It honestly hit pretty close to wine yeast styles. I didn't notice anything very different. This mead was pretty smooth - little to no yeastiness. I think that because I put so much other stuff in this mead, I didn't really get a clear hint on the yeast profile.

I've heard you can add maltodextrin in wild fermentation as bretanomyces food (as normal wine yeast can't eat it), but more maltodextrin is supposed to add LESS brett flavour, as it makes the brett yeast less stressed, so I don't know if it would have made a difference
What's that purple one second from the right on the upper shelf in the tasting part? It is such a striking color, like the Yoda one that it caught my eye. Hoping there will be a video!

It's cool seeing how far the wild yeast went, but I don't think I'd want the snow water. Growing up in New England, I heard again and again as a kid that eating snow is bad because of pollution and smog accumulating in snow, so without finer filtration it feels a bit gross to me. Maybe I would go with ice from a reservoir instead.
