    After making these a few months back and trying it with some friends a couple days ago I just bought the ingredients for a 5 gallon batch, this was a great mead.

    This brew looks fun and very approachable. Something to think about brewing soon!! Thanks for talking to the audience in a "teaching" tone, like describing the bottling wand in appropriate terms versus, saying something goofy about the "springy thing". Also, reinforcing the use of nutrients to get a GOOD brew in shorter amount of time. I always look forward to your videos!

    I think since you like the balance of astringency and sweetness you should look into making an aronia mix berry. I just bottled one where I fermented aronia berry in primary using 3lbs of Christmas berry honey and cooked down raspberries and sweet dark cherries in secondary. It sat in secondary for about 2 months. Was ready to drink after bottling. You can create your own recipe if you'd like but I used a half gallon of aronia berry juice 3.5 lbs of Christmas berry honey and qa-23 yeast and topped it off with spring water. In secondary I cooked down 2 lbs of raspberries to 1 pound of sweet dark cherries.

      For a long time I was drinking dark roast dandelion root for a coffee replacement. And, with my current caffeine intake, I should probably get back on that! I think it is a lovely tannin source. Very into it.

    If I hadn’t had to already split half my hives, I’d have enough honey from apple and OSR and I would definitely be making this!
    Will have to wait until July sadly :(

    Saying no body likes bottle bombs is correct but I had one with beer the other day, im not sure if it was an actual bottle bomb or if the bottom just came out from overuse and over cleaning, I went into my shed and found the table my last batches were sat in before I labelled them and put them in my cabinet, was totally saturated and found a bottle empty with no bottom lol. But if it was a bottle bomb it didn't break other bottles around it and none of the others from that batch exploded

      Yes, yeast dont eat lactose, lactose is very smooth as well

    How do you think a couple grams of red wine tannin would do as a replacement for the roots?

      I think that would work just fine. That roasty/toasty note in there is pretty subtle.

      Bottled my Tasty Mead variants last weekend. Really hard waiting for the one-month bottle conditioning to be over. Also my first time using dextrose to prime as I was unhappy with the low amount of carbonation from priming drops for my first cider and skeeter pee. A lot of test variables to look forward to results!

      Carb drops definitely don't provide as much control over carbonation levels, that's for sure. I prefer the rate of control using dextrose, but the extra work gets me, hah.
