Imagine if Optifine didn't exist and Mojang would actually need to do their job --- The stars would die, universe would collapse, and out planet would get eaten by a black hole.
Sodium is definitely so much better, optifine is much less careful with compatibility. Also, mojang also cares about optimization, but they: 1. Have less time to work on pure optimization, although they could probably get a few employees to strictly look at optimization stuff. 2. Mojang is currently also targeting older devices with less features that are very useful for performance, hence they cannot do many of the things sodium does. 3. Are already doing what they can in many cases, though slowly, for example with the extreme performance improvements for the lighting engine, that even obsoleted starlight!

sigma Edgecraft mod
The only issue is that sodium is fabric so no support for forge
Embedium is a forge port of sodium
the next sodium release will support neoforge 1.21, which most forge mod developers are switching to for 1.21

Even now with sodium and fabric you need like 10 different mods to get all the features that were just built into optifine.
But my mod won't break from invasive code of optifine, worth it
