As far as chopping goes, you might find it easier with a larger knife. I find it gives me far more control when chopping something firmer like carrots or potatoes, possibly die to having greater leverage. Did you watch the rugby the other week? I was in a pub in England, and was the only one in a Springbok shirt, ended up being bought several drinks!

Apologies for sounding alarmist but you definitely need some better knives! You need a sharper, larger knife for that kind of chopping. Any time you're putting a lot of pressure on a knife like that it means something is wrong. :)
