What a sweet and beautiful lady you are. We lived in Port Charlotte, Florida from 1974 until 1985 when we moved to the beautiful mountains of western North Carolina, Asheville to be specific. Our 2 son's are married with grown children of their own. I'd love to have you over for coffee, a big glass of iced tea or lemonade. We could share favorite recipes. But distance prevents that. Remember guys...anything u see n the freezer section at your grocery store can be made fresh by u and frozen. Eggs, french toast, pancakes etc for easy breakfasts too!

I love to make freezer meals and the dump meals for people when they are having a baby. I filled up my brother and sister in laws freezer and it was great for those first couple of weeks with new baby. And your pie lookefd amazing.
It all looks delicious and I am going to try the chicken pot pie sure and perhaps used left over turkey as there will be plenty. It sounds so warming and good! Loved the Taco dishes and ribs meals as well.........like them all. Now you are getting me inspired. LOL Retired with my husband just having rotater cup surgery on his right arm and he's right handed so I am the nurse and it's a full time job right now. Have you tried to shred chicken with your hand mixer? It is so much quicker and the chicken shreds up a little more finely so you don’t have the big chunks

That pillsbury pie crust is really good. I always keep a couple in the freezer. They defrost pretty quickly and you can take out one at a time if needed. I Also havev made a similar version of the chicken pot pie and it is so comforting and so very good. I wish I'd thought of making freezer meals when I was pregnant back in the 90'S. DUH! Lol. I would have saved a lot in take out fees.
Looks good! Many older people complain that it is so hard to cook for just two. I still use my old family recipes which I find make 3 or 4 meals for us so I mix it up, bake one and freeze the other ones raw. Our favorites to freeze are meatloaf which gives me 4 using small pans, enchiladas...I double the recipe and get 6 pans, and spaghetti pie. I use Pyrex baking dishes, line with plastic wrap and when they are frozen I pop them out and put in a bag. Then when I want to cook it I unwrap it in the morning and put it back in a pan in the fridge. I use the same 4 pans over and over but usually have about 15-20 meals in the freezer. Cooking this way allows me to just cook about 3 times a week.
Again, we are like the same weeks pregnant. I'm almost 38 weeks and I have stocked my freezer with tons of sandwiches for my family, taquitos, burritos, meatloaf, Mac n cheese, chicken and dumplings, quesadillas, breakfast burritos, sausage balls, etc... Now I'm doing last minute cleaning and prepping.

Why have I never prepped my enchiladas like this before?! So much easier than defrosting an entire bake..and can choose how many to do, add sauce and cheese at the time and voila! Or eat them straight as taquitos ;) you're on the final stretch woohoo!

Thanks for the easy recipes! If I may give an unsolicited advice, the way to roll up the taquitos is actually to put the filling closer to one end of the tortilla (not the middle). That way, you have your filling right under the first fold/roll. As you keep rolling the rest of the tortilla, you're just securing/tightening the whole thing. The first roll already "wrapped" all of your filling. ☺️ I hope the rest of your pregnancy and delivery goes smoothly! 🙏
Lynette, Just a suggestion but instead of using pie crust for our chicken pot pie I buy the Grand Biscuits by Pillsbury . I just make them according to the directions and then you can either put your chicken pot pie filling on top of them or you could just eat the biscuits on the side. Thought it might be quicker after you have the baby.
Lynette I just had a genius idea! Maybe while your mom and grandma are there this winter, theyd agree to do a recipe video and you could record them. I’d love to see one or two of their recipes too, and kind of envision hearing a few stories of when they were raising their kiddos or favorite memories! What do you think? Mine is the reverse of yours Lynette grown & gone far away.. I like a crockpot prep to cook 4 myself and freeze leftovers.
