Looks very good. I would add a few more seasonings, maybe a bay leaf. More flavor. Made a big pot of split pea & ham soup yesterday, took the bone I had saved from the Christmas ham out of the freezer. Added some potatoes & lots of other veggies. Had some for dinner with fresh cornbread, divided the rest into smaller portions for the freezer. With other foods frozen in meal size portions my freezer is now well stocked for the next month or more. This stew would also work well for freezing in meal size portions. Great when cooking for one.
I wish it was 17 degrees here. It was -8 degrees this morning around 8 am, and that's not even the coldest I've seen it in this state! It's supposed to be in the 20's and 30s next week though. I do like the idea of having a faster version of Beef Stew.
Hi Catherine. This stew looks so warm and comforting. Both my husband and I are in our 60s and in a season of craving stews and chowders. Just in the last month, we have made fish chowder, corn chowder, both chicken and beef stew. I have never even thought of a ground beef stew, but I am surely going to be making this one. I always have ground beef in my freezer but not always stew beef or cooked chicken, so this one will be a wonderful addition. Thank you so much for sharing this one with us. Made Beef and veggie soup in my slow cooker this weekend. Used the veggie that you did but I used1lb beef stew meat that I cut into smaller pieces. I seasoned the beef stew meat and the veggies. Put meat, veggies, 32 oz of beef broth, a can of diced tomatoes (basil, garlic & oregano) in the slow cooker and stir. Cook on low for 6.5 hours until meat done & veggies tender. About 30 minutes before time is up, make a package pork noodles (didn't have any beef ramen), drain and stir in noodles. *Super easy!*😊 If you don't add the noodles, it's a Dump & Go slow cooker recipe.👍

I’m a Cajun girl so I make mine with a dark roux, no tomato products and serve it over rice. What I love about your recipe is that you use ground beef. Not any ordinary ground beef but Wagu! I always use large chunks of chuck roast for my stew. I flour it when i brown it so that thickens it. My family love large chunks of vegetables. Your stew looks more like a soup and i love that you use ground beef. It looks like it cooks much quicker so im going to try it. Thanks for the recipe.
Yep...cold weather brings out the stew in everyone...Lol! I just made a beef pot roast in the slow cooker yesterday but we also love a good pork roast stew the best. It really takes on the flavors of the veggies and herbs and spices well. The only problem with slow cooker recipes is that you are tortured with the yummy smells all day until it's done. Lol! Our temps here in Wisconsin are about 1º with a wind chill of -18º...BBBRRRRRRR!!! Definitely calling for some warm-you-up stew. Yours looks awesome...yum!

I've been making a version of this for a few years now. I use ground beef or turkey, beef or chicken broth, Trader Joe's mirapioux, fresh kale or spinach and rice. Sometimes, I add a can of petite tomatoes. Catherine, your version looks delicious! Something new to try. This type of stew/soup is versatile and one can add whatever is on hand ❤

Delicious! I love a good beef stew, especially on these single-digit temperature days. My family always uses cornstarch as a thickener and adds rosemary to the mix for some savory flavor. We always make ours in a crock-pot-it's interesting seeing it cooked in a Dutch oven. Stay warm down there!

It’s like carne con pappas just take out W sauce add beef bullion for salt and cumin cook same way serve w fresh tortillas sooo yummy

Delicious! I love a good beef stew, especially on these single-digit temperature days. My family always uses cornstarch as a thickener and adds rosemary to the mix for some savory flavor. We always make ours in a crock-pot-it's interesting seeing it cooked in a Dutch oven. Stay warm down there!
