Ceviche is done in most countries just called differently. And I disagree with Gordon here. Diced is not the only way. You can even ceviche seafoods like small shrimps when fresh.
Ceviche is always cut into cubes... nothing for you to disagree with. Now, many countries have other versions (which are not ceviche) such as carpaccio, sashimi, etc... where fresh seafood is marinated (cooked) in citrus, salt, soy sauce, and the lot. If you don't know something, just admit to it, no need to look like a misinformed clown! Take care!
