Sure seems like Japan is overflowing with tourists these past few years. My hunch is that this “school” was strictly conceived a tourist business. One big giveaway is, there’s a sheer lack of cogency. Giving any kind of lesson in any “school” isn’t as easy as some business people think. As it looks, it can be almost entirely non-sensical. The udon noodle cutting sheet is another clue. In research, it’s been brought up that people who tend to be monolingual and monocultural tend to have a harder time understanding other ways of seeing things. They don’t even check to see if every table got an egg. I shake my head.
But on another thought, isn’t the pot of water suppose to be boiling before noodles are added?

The udon dough Kyde made from scratch couldn't be cut/cooked during the class because the dough needs to proof/rest, usually for a few hours, beforehand; i.e., it wouldn't be practical for folks taking the class to wait that long before cutting/cooking. Another great video.

OMG, those boulders are signs of some serious earthquakes. Whenever you see very hard rocks with striped colours you know they are metamorphic rocks, created by immense pressure and heat when two of the Earth's tectonic plates crush each other. These mountains used to be the ocean seabed and have been squeezed up into the air.

I believe that ride you took is based on cars Japanese farmers used to bring equipment and harvest up and down the mountains! Small rails and the cars are flat - used to bring bamboo poles down. So many farms were up in the mountains and the farmers lived in or near those little villages. Fun video, thanks for sharing!!

Udon facts: the recipe really is just flour, water and salt 😁
the reason you were given a pre-made dough is cuz the dough need to rest overnight. If you don’t rest it, the noodles will break apart easily when boiled.
Stepping on the dough is necessary because 99.9% of people don’t have the upper body strength to knead a dough as dry as udon haha and kneading is what give udon it’s chewy-ness
To be fair, the class should’ve maybe explained a bit of this, to like….impart some actual knowledge of something lol
    Sorry for geeking out…as a line cook, I can’t help it 🥲

this has got to be the funniest video you have ever done. It started with half-assed noodle instruction, segued into beetle mountain slow coaster, and I’m now obsessed with “Dark Espania”

I am guessing udon dough have to be left for few hours or maybe a day or so, before cut in to the shape and eaten, which is a common way to gives better texture to the udon. That is maybe the reason why the school didn't let you eat the dough you stepped on at the spot. I think they should explain it or if their English skill isn't good enough to do so, they must make a written paper or something to let you guys know what you are doing. (^ へ ^ ; )

I speak Japanese, haha, they didn't need to make any special sheets. The staff was just bouncing off the walls, it was a wild ride. -E
