2 Thess 2:7 says, "taken out of the way." Not removed from the earth.
The passage says the Holy Spirit will no longer restrain the growth of evil, but that does not mean He will have no ministry whatsoever.
Could playing video games with killing in them be considered sinful or a lust of the flesh or the lust of the eyes?
It depends on why you're doing it. Also note- different people get different convictions from God.
