    Velvetting ang technique na tawag diyan sa paglalagay ng baking soda ginagamit yan pag madaliang tenderising 40 minutes before cooking pwde yan tapos 1 minute blanch sa hot water para mawala yung lasa ng baking soda or haluan niyo ng shaoxing wine para maneutralize yung lasa ganyan ginagawa namin sa hotel salamat ninong sa bagong technique

    0:12 JUST THE TIP # 1: Isa-isahin ang paghiwa ng broccoli sa ilalim at iporma ng mga puno-puno para hindi masira. Pwedeng hatiin sa sa dalawa o tatlo depende sa laki na gusto n'yo.
    1:30 JUST THE TIP # 2: Edible pa rin ang stem. Tanggalin lang ang mga nasa gilid nang konti. Pwede n'yo isama o hindi.
    1:48 JUST THE TIP # 3: Hugasan ang broccoli bago lutuin. Isang banlaw pwede na.
    2:29 JUST THE TIP # 4: Sa kumukulong tubig, maglagay ng konting suka para manatiling berde ang kulay, kumbaga sa photoshop, mas saturated. Maglagay din ng konting asin, pampalasa.
    2:57 JUST THE TIP # 5: Saglit lang ang pagluto ng broccoli para may crunch pa rin.
    BLANCHING & SHOCKING: Pwedeng i-blanch tapos i-ice bath pero nakakatamad 'yun. 😅

    Nice! Try nyo gumamit ng 7Up (soda na kasi 'to) alternative sa baking soda para di masyadong mapait. Pampalambot ko ng karne, 7Up at suka. Mabisang panlinis at pampalambot ng karne. Mas matabang kasi 7Up vs Sprite

    Nong dagdag lang sa tip, pwede ka rin magvelvet ng beef: ibabad sa puti ng itlog. (Na may iba pang seasonings ewan). Kung maalala ko ng tama, nagbbreakdown rin ng fibers ang egg white na hindi siya nalalamutak. Di ko panasusubukan kasi nakakatmad rin pero mukhang masarap sa picture haha :)

    Tama ka po ninong abt sa stem ng brocoli kasi juskoo mga mamimili namin sa gulayan namin is ang aarte napaka laki raw stem, e kung wlaa yung edi snaa bulok na yung brocoli pagdating sa market.     Ian.. anticipate mo yung eksenang kinukunan mo.. isipin mo yung story line, tutukan mo lang kung talaga bang kailangan ba talaga makita yung mukha ni ninong, or kailangan ba yung dish lang ang dapat ipakita.. kahit siguro mag handheld gimbal ka nalang, di naman kasi kailangan ng ganun kalaking stabilizer sa shots nyo, mabigat lang yan at kaya na yan ng handheld stabilizer..
