hey mate, what temperature you use? and have you tried using less amount of coffee like 15gr or less? if you have, do you reduce the interval time?

Just drop the water amount accordingly. 3 x amount of grounds, i.e. at 15gms, 45gm of water.. 20gms, 60gms of water. Stick to the same amount of time.

At first I thought you have the 4:6 method wrong because of all the equal pours of 60ml. But you did not. The first pour is for the acidity and the second for the sweetness. In many vid's you see people have different first and second pours. You did not. ;-)

In the practice there's no difference if you use more or less water for the first and second pours. So most people prefer to use equal pours for simplicity and convenience. If you want sweeter coffee you should want to increase your water temperature, stretch your ratio or grind a bit finer (longer brew time)

The 4:6 is easily customisable.. the first 40% is for sweetness and acidity, which is why most ppl dial in a lower first pour and a higher second pour, to maximise sweetness. And the 60% is for strength... personally, I tend to do a 45gm, 75gm first 2 pours and then go straight to a 90, 90 last 2 (instead of the 60, 60, 60) to reduce the strength of my darker roast coffee.
