I engage in a modified version of MMA training particularly for self-defense purposes and scenarios. I train hard with my punches; but I also train even harder with open-hand or palm strikes, elbow and knee strikes, and kicks (roundhouse, side kicks, teeps ,front kicks, oblique kicks, etc.)

Quite the opposite. you should extend into the target. you should not stay locked in the extended position. when you extend it means your arm muscles are relaxed you're making like a whip-like movement. the hyper-extension is on the pull back. a whip like movement should be there in both the use of weapons and striking/kicking.....i would add the use of single arm pushups to simulate striking and driving so you gain both endurance in holding the elbow in and strength with pushing back against body weight....the last thing would be makiwara training.
