    Pineapple Cheese Casserole
    2 (15 oz) cans pineapple chunks (drained, but juices reserved)
    1 1/2 cups shredded cheddar cheese
    1/4 cup pineapple juice (from reserved juices)
    1/4 cup all-purpose flour
    1/2 cup white sugar
    1/2 -1 sleeve Ritz crackers, crushed (depends on how much topping you'd prefer)
    1/4 cup butter, sliced
    Preheat oven to 350 degrees F.
    In a large bowl, combine the first 5 ingredients. Spread into a greased 8x8 baking dish.
    Top with crushed crackers and butter slices.
    Bake at 350 for 30 minutes

    My husband is in complete agreement with Steven!! Pineapple doesn’t belong on pizza or a ham and he said this dish didn’t sound good to him. Loved Steven’s facial expressions!!

    My first cooking assignment in Home Economics in the middle 70s was pineapple casserole. I distinctly remember hand writing the recipe on the 3x5 index card.

    Hi Mandy, try adding a can of regular corn in addition to the cream corn. It helps the texture and adds a bit more substance. Love all your videos.

    I made corn pudding for Christmas dinner. Mine was different than yours for sure. A can of corn and one of cReamed corn, eggs, sour cream, melted butter and Jiffy corn bread mix. I love it!!!

      I am with Steven....and the pineapple dish...however I do like pineapple on pizza and love pineapple upside-down cake warm ....if you made a crust with the crackers and butter and sugar and added some type of pineapple filling but definitely not cheddar cheese.

    So I’m a Georgia girl but I live in Oklahoma now. Never had corn pudding until I moved here. My mother in law makes it with jiffy instead of bread. Also the SAVORY cheese version is my favorite!

    I have a story for you. I saw your video with the Pineapple Casserole and I received your email with the recipe. I knew we were having ham for Christmas and I thought that would make a perfect side dish-I was skeptical but OMG-totally delicious! Last night we had different leftovers for dinner. After dinner my husband asked why we didn’t have the new casserole. It will be on the table tonight with leftover ham! Thank you so much for your delicious recipes!

      I must agree with your husband. While I do love pineapple, I don’t like it on pizza and would probably not like your pineapple side dish. I live in the northeast and have never heard of it.

    Hi guys! I remember as a young child ( hard to believe that I can remember that far back! im soon to be 68) my mom and grandma making the chicken and spaghetti casserole, but it was baked in a ring shape! Sorry girli gotta agree with Steven! Pineapple doesnt go with cheese, I love them both but separate!!! LOVED HIS POOPOO FACE after tasting it! Gotta admit that is probably what my face would look like too! Its ok darlin Im with ya!!! Sweet corn bread puddin and rice puddin with raisins was a weekly thing for us growing up. We called it poor man's desert. Mom used the full amt of sugar AND we added a tad bit of milk to it as we ate it! All ingredients were readily available and of course she used homemade bread! Thanks for taking me on a trip back in time!!!!

    My mom always did a lettuce leaf, a pineapple ring on top of the lettuce, a dollop of mayonnaise in the hole and cheddar cheese on top. It’s really good. Love corn pudding…we make it with sour cream, can corn drained, cream corn, jiffy cornbread mixed according to directions. Mix it all together and bake…yum. I will try your version of corn pudding it looked soooo good.

      My Mom did the very same dish, which I loved. She only added a maraschino cherry on top of the mayo and cheese. Great flavor combination that compliment each other. A winner in my book! 😊

    A "vintage" car needs to be 25 years old. I'm unsure what the age of a vintage recipe might be. Love your show, and the love you share with your family and us.

    According to my research, antique is over 100 yrs old. Vintage is at least 40 years old. Hope that helps! Oh, and none of these look like something we’d make.     I am originally from Gastonia, NC. I never heard of pineapple casserole, but we always made pineapple salad. That consists of a leaf of iceberg lettuce on a salad plate, topped by a slice or two of canned pineapple. Top it with a dollop of Duke's and a sprinkle of mild cheddar cheese. It is really good. Love your show. Steven is hilarious!

      My Mom did this same salad but used canned pear halves instead of the pineapple. Sharp cheddar cheese is the best and I still have it now.

    After you asked the question about pineapple casserole (I was one that had never heard of it) I heard 2-3 more people mention it! I decided to make it for Christmas and everyone’s reaction (including my parents and in-laws who are all picky eaters) said “this is weird… I need more” 🤣

    I am southern and I LOVE pineapple casserole. I do use sharp cheddar instead of mild because it makes it so much better and I don’t like it overly sweet either.

    I got the cheese grater from Amazon that you recommended and I will let you know that it has saved Thanksgiving and Christmas because I grade my own cheese to make macaroni and cheese and that’s about 4 pounds every holiday and I was getting tired of doing it by hand.😅

    I first had Pineapple Casserole while visiting relatives in the south. I thought I was getting cheesy potatoes from the buffet…what a surprise when I tasted pineapple but I loved it. Made it several times for friends here in the Pacific Northwest and it’s always a big hit.

    Interesting corn pudding. I Julia Pacheco 's corn bread pudding. It has one box of Jiffy, cream corn , whole kernel cien draining, 1 stick of butter and 1c of shredded cheese. It's good. I actually made it last night with a ham.

    I absolutely love Corn nuggets. I would imagine the Corn pudding is basically the same thing. I buy them premade in the frozen food section when I have a taste for them.

    Kentucky girl here. I made corn pudding for my husband’s northern Illinois Italian family for Thanksgiving. They didn’t touch it - so much for sharing my southern roots. Also my husband thinks pineapple on pizza is a sin. 🤪 And as for my northern in-law’s green beans, they were CRUNCHY! When I asked my sister-in-law about it, she said she doesn’t like cooking the nutrients out of her beans. I told her to take some vitamins and COOK HER DANG BEANS! 😁

    We make a corn puddin for holidays but it’s the jiffy corn casserole recipe. Sometimes we add a little cheddar cheese. Oh my! Everybody loves it! I have to make a double recipe.

    I've never had a pineapple casserole until Christmas Eve it didn't have cheese in it though...I was impressed with how much I liked it. It went really well with the ham we were having as well.

    The pineapple casserole I make is from a Georgia Junior League cookbook from the 80's and it uses crushed pineapple. He might like that better. It's my favorite part of our Easter dinner. Delicious!

    I recently saw an "infommercial" for a similar grater, and they grated saltines and Graham crackers in it! Worth a try! I love your videos.

    My mom used to make something that was pineapple and cheese when I was little, I'll have to ask my sisters if they remember what it was. I liked it but as we got older she made more cakes and pies and less fruity desserts. But she loved to bake and cook, it looked like a bakery at our house during Christmas! I sure miss her! I'll let you know if I find out what that pineapple dessert was. I hope y'all had a wonderful Christmas and have a blessed New Year!

    Mandy I make a corn casserole with jiffy mix and cream corn and 1 can of regular corn ,1 egg and 1/2 stick butter mix the wet ingredients ,then add the dry jiffy mix bake at 350 degrees until brown

    Hey Mandy for Christmas this year I made a corn casserole just look up jiffy corn casserole. Five ingredients and wow it was delicious. I am also a fan of all things vintage especially Christmas in order for it to be vintage it has to be over 20 years of age

    Love the pineapple casserole. I prefer to use crushed pineapple when I make it though over chunks. Always a favorite!

    we do baked pinapple, just eggs milk pineapple and bread, its like a bread puddin that has to go next to holiday ham, buuuut now we gonna try the mandy way. btw you are the only woman allowed to show me up in my own kitchen! much love, stay safe all

    I love Hawaiian pizza, so I will probably like the pineapple casserole. I am a vintage southerner, but I have never heard of the recipe. I may throw in some ham chunks to make it into an entree dish. (Just a thought). Love your videos!

    I've never heard of the pineapple dish & I don't it on pizza. I'm a cajun from south La & I've eaten corn pudding before. I love corn so this was a no brainer. I'm with Steven on this round.     My husband made Steven's face when we were first married, and I served him cooked apples with dinner. I was promptly told that fruit was for dessert and not for dinner. Later that month we went to his parents for Sunday dinner and his mom served a pear slice with mayonnaise and a cherry on top. Now that is vintage.
