Healthy Organic Meal Prep| Salads, Lentil Bolognese, Chocolate Protein Pudding

  • Hey everyone thanks for joining me for another meal prep! Today I'm making some salads all portioned out in individual containers, sunflower & hemp ranch dressing, lentil bolognese in the instant pot, tofu ricotta cheese, and chocolate protein pudding cups!
    Recipes are written out down below!
    non fortified nutritional yeast- amzn.to/3FDaJuT

    fruit and vegetable wash- amzn.to/3LQJvVN
    lentil bolognese-
    1 onion diced
    4 garlic cloves minced
    2 carrots diced
    1 red bell pepper diced
    2 portobello mushrooms minced
    1 cup small brown or green lentils, rinsed
    1 jar marinara sauce (low sodium is best)
    3 cups water (use 2 if you want a thicker sauce)
    1/2 tbsp Italian seasoning
    sprinkle of red pepper flakes
    pressure cook for 10 minutes, natural release
    Tofu ricotta
    1/2 package firm tofu (not extra or super firm, it will be too dry)
    1 lemon juiced plus the zest
    2 tbsp nutritional yeast
    2 garlic cloves minced
    handful of basil leaves
    pinch of salt to taste
    Chocolate protein pudding-
    1 1/2 scoops protein powder- about 60 grams
    4 large pitted medjool dates soaked in boiling water for a few minutes to soften them, drained
    2 tbsp ground flax seeds
    2 tbsp ground chia seeds
    4 tbsp hemp seeds
    3 tbsp unsweetened cocoa or cacao powder
    2 1/2 cups water or a little more as needed to blend
    Sunflower seed ranch dressing-
    1/2 cup sunflower seeds
    1/4 cup hemp seeds
    1/4 cup cashews
    (soak all nuts in boiling water for 20 minutes, then drain and rinse)
    3 tbsp white vinegar
    2 cloves garlic
    2 tbsp sweetener of choice
    1 tbsp nutritional yeast
    fresh cracked black pepper
    2 tsp dried dill
    pinch of salt

    There is nothing more satisfying than great greens washed and ready to go. Maybe that’s weird but. I’ve been doing this for 20 plus years and it never gets old.

      I fully agree. There are so many possibilities and flavour profiles,one cannot get bored, if they do it is lack of inspiration or laziness not to try different veggies, dressings, etc. if I go more than a day or two with a good green salad, I start getting cranky (for hubby it is lack of bananas). Having them washed and ready to go means there is no excuse not to have a wonderful salad at lunchtime or dinner time, no matter how busy one is.
      I like a few beans, lentils, grains, etc mixed into my leafy salads for the protein hit and I always have them prepared and ready to go through the week. I cook them up in my instapot and have then ready t go. I do similar with root veg and squashes, roast them when I have the oven on for awhile and then I do not have to wait on sweet roasted root veg if I want a salad wit them added.
      My favourite green salad item atm are pea shoots. I grow them with the kids and they love them, they are quick growers and no need to worry about spacing them, staking them, etc as we grow only for the shoots and they are great for “pick and come again” nutrition. Great in sandwiches, stirfries, etc too.

    I love your meal prep videos because I buy so much of the same ingredients and I get a bunch of ideas! Lentil bolognese is a favorite, I love to roast a tray of veggies and spooning marinara over with quinoa. 😊

    I just found your channel and love it! Best way to keep greens fresh in fridge? Plastic container? Also the GARLIC press is under the company name MASTERPAN. Seems like mostly European websites BUT also says sold out and not available at this time on several sites! BLESSINGS to you. Awesome I go cuz this is the way I eat! 😋 😋 😋

    Your lentil bolognaise recipe is similar to mine. I add crushed up walnuts to it though also for an extra hit of protein and good fats. I make a double batch and make spag bolognaise, sloppy joes, and even a burrito filling by cooking some extra onions and garlic, adding the bolognaise to them to heat them up, add my chilli, cumin, thyme, etc to get the Mexican flavour profile into it and serve with lots of fresh chopped veg, homemade tortillas (they are so easy to make and far better than shop bought), some pico and guacamole, along with a little Mexican/Spanish rice. It is always a winner. For the sloppy joes, I use the basic bolognaise recipe, add organic passata, a little mustard and some herbs and seasoning to the bolognaise, cook it down and it is ready to go. I found that they freeze well, so I freeze portions for a quick and easy lunch or dinner when we are busy.
    I do not use store bought marinara sauce though, for the very reason you mentioned, the ridiculously high salt content. I don’t know why they put so much in. Instead I use either a store bought organic passata or just blitz a can or jar of chopped tomatoes into a “sauce”, add my veg, herbs and spices that I like and cook it down a little to allow it to thicken to the desired consistency..it does not take long and if you are in a real hurry you can blitz down some cooked lentils or beans to act as a thickener. This way I control the salt (and anything else) content. If I use a can of tomatoes, rather than my home grown canned/bottled tomatoes, I do add just a tiny bit of sugar…I use granulated date sugar and use .25 - .5 of a teaspoon of it to take that bitter taste away that they can get when they touch metal.
    Definitely going to try your tofu ricotta. I love tofu so lve to use it wherever I can. Have always used almonds t make my ricotta, and while it is not difficult, it takes awhile. Your tofu version looks quite quick. I cannot wait to try it.
    I have never used protein powder. I am not one for smoothies. The one time I had something with protein powder added to it was when a friend made protein waffles while I was back in the US visiting my family. I hated it, it tasted chalky and gross, so I have never dared waste my money on a tub of protein powder, as in Scotland it is just so expensive. Your chocolate pudding though has certainly caused me to consider giving it a try. Do you taste the powder? Or did my friend just nt cook it properly? Lol

      wow that sounds great! it depends which protein you use, some are definitely more chalky than others but in the pudding recipe to me its not chalky at all, its creamy from the hemp seeds!

    Can you please do a video on why high sodium is bad? The canned stews I buy are high in sodium (about a thousand mg per can). Not sure why it is bad though. Thank you, love your recipes.

    I have never seen someone wash their greens in soap I don't even think you should do that A vinegar bath is more appropriate

      It’s fruit and vegetable wash the ingredients are very natural! Works so much better than vinegar in my opinion!

    Google says it’s not recommended to literally wash it with soap your only supposed to rinse it with water, I’m concerned that it can harm you

      its not soap its "fruit and vegetable wash" made with all natural ingredients! its meant for fruits and vegetables non toxic
