This was a 10 out of 10 for me. I made it some days ago and loved it. Only thing different I did is add a sour cream, strawberry, monk fruit sweetener blended icing with strawberries added on top. I love how I've been able to eat this along with other keto meals and I'm continuing to lose weight!
FYI, just made this and put it into our Colorado cooler - the back porch at 20°. It's 1 hour before New Years and we have the Champagne ready. I just HAD to taste the cheese cake and was smitten. In an hour my wife of 30 years will let me know if I'm worthy. Keep your fingers crossed. It's a surprise.
We tried your recipe for my mom’s birthday and it turned out amazing everybody loved it!!! I added lemon zest and lemon juice (my mom loves lemon),we doubled the crust, and topped with raspberries. Also the cinnamon crust went really well with the lemon and raspberry. Absolutely loved it!! This is now my go to cheesecake recipe. Thanks so much!!!!

Did it ever occur to anyone that maybe she feels comfortable cooking with what she has in her kitchen. What difference does it make what she uses so long as it's clean and the results a good. I'm just saying...no need to insult each other.
I made this yesterday. All I can say is WOW! I've never been someone that craves sweets. But for years pizza, rice, things wrapped in flour tortillas, and cold beer made up a HUGE part of my caloric intake. I'm around 6 months into keto and IF, and down over 50 lbs. I always thought that when I reached my weight (actually pant size) goal, I'd celebrate with a big slice of cheesecake. Now I don't even have to cheat for a celebratory reward. I honestly can't tell that there is fake sugar in this cake. But I will say, even though this is low carb/keto friendly, it's still a very high-calorie food and you can't just pig out on this because it's no-sugar. You have to treat it like what it is and eat it in small portions. I made a blueberry topping for mine. It really makes a beautiful presentation and adds a nice little "zing" to the pallet.
I had to laugh you remind me of my Mother. She always used, just the almost too small bowl, when mixing, it is so much easier in a larger bowl. Thanks for the memory - she was the best. ❤️
Lol my Mother always did the same thing too small of a bowl when mixing ingredients and for chopping she would use a small paring knife to cut up her stuff. It’s like what are you thinking woman? But no matter how many times I pointed this out to her she continue to do the same thing ,so I figured there must be some brain disconnect and finally just stopped bringing it up.
Freeze portions? Serve to family or guests? At this part of the video I was already seeing myself alone in bed eating the entire cheesecake right out of the springform pan. (shrugs)

In the process of making cheesecake right now have finished baking and letting it remain an oven with the door cracked however on the video the oven temperature is told to be 300 but in the written instructions it’s 325 so I’m not really sure I cooked it on 325 but the last five minutes reduced the temp. Also the written instructions say to use a 10 inch spring form pan which is what I’m usingHowever the crust did not go up the sides of the pan it gave me a thin layer in the bottom of the pan but nothing left over to go up the side so I think there may be a few inconsistencies between written instructions and the video. But to anyone making it double your crust recipe if you’re using a 10 inch spring form pan. An update the 2nd time I made this I added some chopped walnuts into the crust mixture it made it a little crunchy , it was SOOO GOOD! Also added some lemon juice and zest.....I made a blueberry keto stevia sweetened topping SO GOOD! This is a great recipe !
I was also thinking about adding 1/2 cup pecans (instead of walnuts, though both are good) to the pie crust. And the lemon juice/zest is definitely what takes it to the next level. Great advice. P.S. If you ain’t making a keto berry sauce to go on top, you’re doing it wrong people. Follow above ^
Thank you so much.... I baked this for my daughter's birthday (we are doing Keto), and everyone loved it. 6 cream cheese packs filled the pan perfectly. It's not excessive.... the filling went right to the top of the pan without spilling over as it cooked. I made it as flat as possible on top, even correcting after putting it on the rack before cooking. I have been to the Cheese Cake Factory many times.... yours is as good... but wait.... even better, cause the sugar factor is not there... Keep on making your good recipes. I loved the cheesecake! It was perfect! I was very skeptical and scared because I had just lost 20 pounds in a month and didn't want to ruin what I worked hard for. I started with a small slice and weighed myself in the morning, lol!To my surprise I actually lost weight overnight despite eating it. I make one like this with 2, 8oz Philadelphia cream cheeses and 2 eggs, 1/2, 1 tsp vanilla, 1 tbls grassfed butter, half a lemon and 1 tsp lemon rind and 1/2 cup whipping cream, 2 tsps of stevia /erythritol sweetener powder.or erythritol only And would sub crust with coconut because i cant eat almond flower but if you can use almond flour with cinnamon, stevia powder/erythritol and melted butter for crust,. Sour cream is optional but I would fold in 1/3 cup or 1/2 cup whlpping cream i use whipping cream but not for baking.in another recipe.This is half the calories and I put them in a cupcake pan with cupcake wrappers. Then freeze some, and refrigerate the rest.. So good. I've lost 40lbs on keto so just maintaining and toning, so if you're trying to lose weight i would be conscious of my calorie intake as well as carbs! it looks so good but that's atleast 1000 calories in one slice lol! Yikes! I would be too scared to eat it.

@@aimeerivera6625 Two tsps of crust in each cupcake liner and i mash the crust down with the back of a small measuring cup with butter and stevia/erythitol the flours i use are coconut and 3 tsp cocoa powder ith grass fed butter and stevia for crust. almond flour is good too.. being on keto, adjust to sweetening to your taste. I bake at 350 for 30-35 mins, then i let them sit on the stove on a rack 1 hour. Then refrigerate or freeze. Oh i add a squeeze of half a lemon and grated lemon also. optional.
Your version is more the standard recipe I've used in the past and more realistic. I'm too scared to use 6 pks of cream cheese, yikes! But it does look delicious. Thanks for reminding me.

I made this and it came out perfect. I still can’t believe it! I had too much filling so I had to remove some of it and my cheesecake took about 65-70 minutes to cook. 50 wasn’t enough for my cake. Thank you so much it’s a miracle recipe!
I’ve made this recipe twice now and both times it was absolutely incredible. I’m a diabetic and I need to watch my sugars so when I crave something sweet, this really does make me feel like a normal person again lol
Made this yesterday and it is TRULY the best tasting keto cheesecake ever . . . Creamy and thick . . . It's huge, just the right amount of sweet and decadent, too. Leave all ingredients on your counter for 4-6 hours to get to room temp first. Used Splenda, not powdered. Oh, and I used a Kitchenaid mixer with the paddle attachment, and that worked perfectly. . . and yes, I spatula-ed every last drop from the bowl lol

I made this today and 8 hours later was able to have a slice, just couldn’t wait til morning! Can I just say it was AMAZING! I went off the recipe through the link and followed the directions. Instead of an almond flour crust i just did crushed almonds, with melted butter and monk fruit. I also added a keto sour cream topping with strawberries! I had no idea a keto dessert could be so good as usually just stick to berries to get my sugar rush. Shocked! Delicious, rich, and yields many portions. I will definitely be sharing! 👏👏👏
I tried that and it's terrible. My advice would be to stick with the recipe. If you're going to change anything, maybe change to coconut flour for better flavor.
It looks delicious can't wait to try it...but one little tip- mix it in this way and you'll never have any lumps...First mix cream cheese until creamy...add sugar (swerve for keto) blend well...scrape down bowl and paddle, blend...add sour cream, blend...add eggs, blend...add vanilla extract, blend... scrape down bowl one more time and you will get a creamy cheesecake every time! My first time ever making cheesecake and it was delicious! Six bricks of cream cheese seemed excessive so I halved the ingredients for the filling but kept the crust the same.
Also I really wish you would have showed what it looks like when you take it out of the oven. For those of us who have never made cheesecake it would be helpful to have a visual.
Jennifer, thank you for the recipe. I whipped up one of these on Saturday for a birthday celebration, and wow, what a creamy, smooth and luscious cheese cakes I have ever made.
Maybe I am missing something and please correct me if I am wrong. Swerve (which is the sweetener you mention) has 5 grams of carbs per teaspoon. Almond flour has 2 grams of carbs per tablespoon. Sour cream has a bit too. Add it all together and it is about 540 grams of carbs in this amazing cake. If your slice is one sixteenth of the circle you're still well over 30 grams per slice. Not bad but still well above the 7 grams in the nutrition description. Do the carbs go away when baking? Please educate me.

Do you think if I halved everything to make a smaller cheesecake would it work? Only part I might change is I will try cooking the base. Made this cheesecake. Same amount of crust, halved the batter. I felt like it was too sweet since by taste buds changed on low carb diet. From not on will be adding 2/3 of sweetener instead of 1 cup. Otherwise amazing recipe. Thank you !!!!
This is the best recipe ever. I can’t get my family members who are not on the diet to stop eating my keto cheesecake that’s how you know it’s good. I prefer using lakanto granulated sugar for the crust and lakanto powdered confectioners sugar for the filling bu if you have swerve than swerve will do. Make it you will be glad u did 👍

Ugh.... my first try and it has a long split as it cooled. I may have cooked it too long (9" size). I also noticed one side was snug against the side of the pan (not badly stuck), while the other side had nicely pulled away ( keeping its shape). I used a spring form recommended by Test Kitchen. I may have beaten my eggs to much, too? I WILL try this again...I don't give up easily. Thank you for the recipe.👏
For those (like me!) who like a heartier (rather than smooth) cheesecake, sub some ricotta cheese for the cream cheese. It actually has a better nutritional profile, with more protein. Also, I often cheat a bit and add a tiny bit of maple syrup to balance out the bitterness of the Swerve (or stevia) sweetener. The stevia/Swerve acts as a sweetness magnifier when just a little bit of real sugar (like maple syrup) is added, and it reduces the bitterness.

My cheesecake had cracked by the 50-minute mark recommended in the recipe. It was not a big deal to me, and the cheesecake was delicious, but next time I will crack the oven and start the cooldown process at 45 minutes. I made a slight deviation from the recipe in this video. As I am doing low carb rather than keto, and as I am lazy, I used a crescent roll dough flattened out in a 9 by 13 pan as the crust. Since my cheesecake was wider and not as tall as the one in this video -- though it was still a full inch thick -- that may be why my cheesecake cooked a little faster than the one in the video.

In the process of making cheesecake right now have finished baking and letting it remain an oven with the door cracked however on the video the oven temperature is told to be 300 but in the written instructions it’s 325 so I’m not really sure I cooked it on 325 but the last five minutes reduced the temp. Also the written instructions say to use a 10 inch spring form pan which is what I’m usingHowever the crust did not go up the sides of the pan it gave me a thin layer in the bottom of the pan but nothing left over to go up the side so I think there may be a few inconsistencies between written instructions and the video. But to anyone making it double your crust recipe if you’re using a 10 inch spring form pan. An update the 2nd time I made this I added some chopped walnuts into the crust mixture it made it a little crunchy , it was SOOO GOOD! Also added some lemon juice and zest.....I made a blueberry keto stevia sweetened topping SO GOOD! This is a great recipe !
I was also thinking about adding 1/2 cup pecans (instead of walnuts, though both are good) to the pie crust. And the lemon juice/zest is definitely what takes it to the next level.

Thank you so much.... I baked this for my daughter's birthday (we are doing Keto), and everyone loved it. 6 cream cheese packs filled the pan perfectly. It's not excessive.... the filling went right to the top of the pan without spilling over as it cooked. I made it as flat as possible on top, even correcting after putting it on the rack before cooking. I have been to the Cheese Cake Factory many times.... yours is as good... but wait.... even better, cause the sugar factor is not there... Keep on making your good recipes. I loved the cheesecake! It was perfect! I was very skeptical and scared because I had just lost 20 pounds in a month and didn't want to ruin what I worked hard for. I started with a small slice and weighed myself in the morning, lol!To my surprise I actually lost weight overnight despite eating it. I make one like this with 2, 8oz Philadelphia cream cheeses and 2 eggs, 1/2, 1 tsp vanilla, 1 tbls grassfed butter, half a lemon and 1 tsp lemon rind and 1/2 cup whipping cream, 2 tsps of stevia /erythritol sweetener powder.or erythritol only And would sub crust with coconut because i cant eat almond flower but if you can use almond flour with cinnamon, stevia powder/erythritol and melted butter for crust,. Sour cream is optional but I would fold in 1/3 cup or 1/2 cup whlpping cream i use whipping cream but not for baking.in another recipe.This is half the calories and I put them in a cupcake pan with cupcake wrappers. Then freeze some, and refrigerate the rest.. So good. I've lost 40lbs on keto so just maintaining and toning, so if you're trying to lose weight i would be conscious of my calorie intake as well as carbs! it looks so good but that's atleast 1000 calories in one slice lol! Yikes! I would be too scared to eat it.

@@aimeerivera6625 Two tsps of crust in each cupcake liner and i mash the crust down with the back of a small measuring cup with butter and stevia/erythitol the flours i use are coconut and 3 tsp cocoa powder ith grass fed butter and stevia for crust. almond flour is good too.. being on keto, adjust to sweetening to your taste. I bake at 350 for 30-35 mins, then i let them sit on the stove on a rack 1 hour. Then refrigerate or freeze. Oh i add a squeeze of half a lemon and grated lemon also. optional.

I made this and it came out perfect. I still can’t believe it! I had too much filling so I had to remove some of it and my cheesecake took about 65-70 minutes to cook. 50 wasn’t enough for my cake. Thank you so much it’s a miracle recipe!

Made this yesterday and it is TRULY the best tasting keto cheesecake ever . . . Creamy and thick . . . It's huge, just the right amount of sweet and decadent, too. Leave all ingredients on your counter for 4-6 hours to get to room temp first. Used Splenda, not powdered. Oh, and I used a Kitchenaid mixer with the paddle attachment, and that worked perfectly. . . and yes, I spatula-ed every last drop from the bowl lol

I made this today and 8 hours later was able to have a slice, just couldn’t wait til morning! Can I just say it was AMAZING! I went off the recipe through the link and followed the directions. Instead of an almond flour crust i just did crushed almonds, with melted butter and monk fruit. I also added a keto sour cream topping with strawberries! I had no idea a keto dessert could be so good as usually just stick to berries to get my sugar rush. Shocked! Delicious, rich, and yields many portions. I will definitely be sharing! 👏👏👏
I'm going to try using roasted pecans then crushed with lots of butter for a crust :). Along with some sugar substitute mixed in.

I tried that and it's terrible. My advice would be to stick with the recipe. If you're going to change anything, maybe change to coconut flour for better flavor.
I find it's much more delicious if you put your own almonds in a food processor or grinder. Tastes super fresh and less carbs than almond flower
It looks delicious can't wait to try it...but one little tip- mix it in this way and you'll never have any lumps...First mix cream cheese until creamy...add sugar (swerve for keto) blend well...scrape down bowl and paddle, blend...add sour cream, blend...add eggs, blend...add vanilla extract, blend...
scrape down bowl one more time and you will get a creamy cheesecake every time! Just a lil FYI😉

I make powdered Erythrital in my Vitamix dry container (or a coffee grinder)and also used some liquid Stevia - for the sweetener
9x13 pan lined with parchment. (it rose way high, so I might use just 5 blocks of cream cheese next time)
Added 4 packets Tru Lemon powder to the filling to make it like my favorite cheesecake from years past.
Keto lemon curd as topping to each individual piece!
A MASTERPIECE!

I tried this recipe a few weeks ago and let me tell you guys! 😍 came out so beautiful and the taste was just or better then a regular cheesecake no lie. If anyone is interested in looking at the pics you can find them on my IG Theketostruggles . I made a few changes but for the most part followed everything she mentioned. Now that it’s autumn and fall in wondering if I can use the same recipe but just add in pumpkin purée for a pumpkin 🎃 cheesecake 🤔
You could try replacing the sour cream with pumpkin but I can’t guarantee it will work!!! I’ll have to try that myself soon

I've made this. It's AMAZING! But all I had was an 8 inch springform pan. There was more than enough filling to make another small one. But for real, best cheesecake ever! Oh, and the batter is SO TASTY!
Finally made this one. Only thing I did was use ground walnuts and pecans for crust to lower carb a bit. My cheesecake was done after 40 mins at 325. I can't wait to taste it!

How much 1 cup 1/4 cup what are measurements
Maybe I am missing something and please correct me if I am wrong. Swerve (which is the sweetener you mention) has 5 grams of carbs per teaspoon. Almond flour has 2 grams of carbs per tablespoon. Sour cream has a bit too. Add it all together and it is about 540 grams of carbs in this amazing cake. If your slice is one sixteenth of the circle you're still well over 30 grams per slice. Not bad but still well above the 7 grams in the nutrition description. Do the carbs go away when baking? Please educate me.

Thank you for this really easy to follow recipe and video! I substituted sour cream for greek yogurt because it was my first time baking cheescake and I didn't grab all the right ingredients. I also used coconut brown sugar for the crust and sweetener so I'm hoping it turns out good when I pull it from the fridge tomorrow!

Do you think if I halved everything to make a smaller cheesecake would it work? Only part I might change is I will try cooking the base. The recipe doesn't say to cook it, but after I made it I read your notes and saw it was an option, that'll teach me won't it. Thanks for sharing this recipe.

Made this cheesecake. Same amount of crust, halved the batter. I felt like it was too sweet since by taste buds changed on low carb diet. From not on will be adding 2/3 of sweetener instead of 1 cup. Otherwise amazing recipe. Thank you !!!!

I prefer using lakanto granulated sugar for the crust and lakanto powdered confectioners sugar for the filling bu if you have swerve than swerve will do. Make it you will be glad u did 👍

Ugh.... my first try and it has a long split as it cooled. I may have cooked it too long (9" size). I also noticed one side was snug against the side of the pan (not badly stuck), while the other side had nicely pulled away ( keeping its shape). I used a spring form recommended by Test Kitchen. I may have beaten my eggs to much, too? I WILL try this again...I don't give up easily. Thank you for the recipe.👏
For those (like me!) who like a heartier (rather than smooth) cheesecake, sub some ricotta cheese for the cream cheese. It actually has a better nutritional profile, with more protein. Also, I often cheat a bit and add a tiny bit of maple syrup to balance out the bitterness of the Swerve (or stevia) sweetener. The stevia/Swerve acts as a sweetness magnifier when just a little bit of real sugar (like maple syrup) is added, and it reduces the bitterness.

My cheesecake had cracked by the 50-minute mark recommended in the recipe. It was not a big deal to me, and the cheesecake was delicious, but next time I will crack the oven and start the cooldown process at 45 minutes.
I made a slight deviation from the recipe in this video. As I am doing low carb rather than keto, and as I am lazy, I used a crescent roll dough flattened out in a 9 by 13 pan as the crust. Since my cheesecake was wider and not as tall as the one in this video -- though it was still a full inch thick -- that may be why my cheesecake cooked a little faster than the one in the video.
