@@tommysikula5205 it involves adding egg yolks to lemon juice and other things in a double boiler set up. You must add the egg slow and steady and make sure the mixture isnt too hot when you add it because the eggs could cook and make your sauce lumpy with no chance whatsoever to fix it. You need to start again if the lemon juice reacts to the eggs and curdles or the eggs cook. It can be a pain. Took me 3 tries to get it right in my gourmet cooking class in high school. It was one of our test sauces we needed to make to pass.
Get tomato sause in a pan, and have it to boil, when it starts losing a little bit of its moisture drop in a few eggs and start mixing for a little, until the eggs get mixed with the tomato sauce. After that, put in some Greek feta cheese, by taking a piece and breaking it with your hands in smaller pieces. Mix it and let it melt a little, and close your stove. Take some good bread and dig in. In Greece we call it Strapatsada. Edit: you obviously put in some salt, and oregano, and you can also add some pepper.

Hollandaise is very easy to make, but easy to screw up. It takes a bit of practice, but gets easier the more you do it. I LOVE making mine with more lemon juice than necessary though.
You can hack it in a blender if you want a foolproof way of making hollandaise. Put egg and reduction in blender heat your clarified butter turn blender on low and pour in butter boom done in 15 seconds. Hell I’ve made hollandaise in a fryer before lol!

I personally eat oats with berries for breakfast. Fast, cheap, healthy and delicious. Although many dont like oats(idk why, just eat them with milk), its really premium for your health. Protein, Calcium with the milk, shit load of fibers, and also good stuff like zinc, iron, Vitamin B1, B2, B3, B5, B6, B7, little bit B9, Vitamin K, Magnesium, Phosphor, Copper and Manganese

This is most likely the American in you man. In Algeria for example, shakshuka is like, the apogee of comfort food/breakfast (though most of us don't really eat shakshuka for breakfast), or at least in my family and in France we consider the perfect breakfast to be a black coffee and a cigarette with maybe a brunch later during the day! It really all depends on the country i believe (and I'm sorry but i find the eggs bacon and toast sad in flavor, lacks some good seasonings)
Breakfast is determined by what you're planning to do that day. If I'm doing something really active, Shakshuka or Chili Con Carne with eggs and tortillas is just perfect. Plus you can pack the leftovers and make breakfast burritos for later 😂❤

Cool of you to include a Maghrebi dish, even though we don't eat Shakshuka in the morning, we usually eat it at lunch. Also, while it can be enjoyed by itself, Shakshuka is usually a base for other recipes, like the Moroccan-style stuffed peppers, tajine of sardine balls or kefta tajine.

I suggest a dish made by chopped onion put in pan with a little bit of oil then add Rumi cheese ( It's Egyptian one and I don't what is its translation 😅) Then add coriander, dill and cilantro but chop them into small pieces Then add eggs , don't leave until the egg become well done for texture Note :- Don't add salt , chesse will do that stuff My favorite dish for breakfast and very simple
