[賤哥的灶卡] 台式漢堡肉 Taiwanese Style Hamburger Patty

  • 台式漢堡肉, 其實是豬肉加了植物蛋白. 這樣會減少成本. 現在植物蛋白越來越受到市場的接受. 兩個混再一起, 就可以增加份量, 真肉用鹽抓出黏性, 另外加上粉就可以當黏著劑.
    Taiwanese style hamburger, it started to be made mixing with soy bean/vegetable protein. This method helps to lower the cost. Soy bean protein is getting more and more popular in the market and widely used. Mix the meat and the protein together, the overall portion is bigger. Meat rub with salt is one of the adhesive and adding corn starch/potato flour is another adhesive to keep all the ingredients together.
    材料 Ingredients:
    豬絞肉1.5磅 Ground pork 1.5 lbs
    大豆蛋白約3/4杯 Soy Bean Protein about 3/4 cup
    紅蘿蔔1根 Carrot 1 count
    洋蔥1顆 Small Onion 1 head
    鹽1小匙 Salt 1 tsp
    大蒜粉1小匙 Garlic Powder 1 tsp
    白胡椒粉半小匙 White Pepper Powder 1/2 tsp
    五香粉半小匙 Five Spice Powder 1/2 tsp
    肉桂粉3/4小匙 Cinnamon Powder 3/4 tsp
    米酒2大匙 Rice Wine 2 tbsp
    醬油2大匙 Soy Sauce 2 tbsp
    香油1小匙 Sesame Oil 1 tsp
    白糖1小匙 Sugar 1 tsp
    太白粉2小匙 Corn Starch 2 tsp
    地瓜粉1小匙 Potato Powder 1 tsp
    作法:
    1. 大豆蛋白先加水泡過
    Soak the soy bean protein first
    2. 紅蘿蔔先切片, 再切絲. 然後切小粒
    Slice the carrot, shred, then chop to small pieces
    3. 洋蔥也先切細絲, 在切小
    Slice the onion first then chop as well
    4. 絞肉加1小匙鹽抓出黏性
    Add salt to ground pork, rub well until the meat is sticky
    5. 把大豆蛋白擠乾, 加入絞肉. 抓勻
    Press and Drain the protein, add to the pork and mix well
    6. 加入洋蔥跟紅蘿蔔
    Add carrot and onion
    7. 混合均勻
    Mix well
    8. 加入大蒜粉, 白胡椒粉, 五香粉, 肉桂粉, 米酒, 醬油, 香油跟白糖
    Add garlic powder, white pepper powder, five spice powder, cinnamon powder, rice wine, soy sauce, sesame oil and sugar
    9. 全部混合均勻
    Mix well again
    10. 再加入太白粉跟地瓜粉.也可以幫助黏合
    Add corn starch and potato powder as adhesive
    11. 放置15分鐘稍微入味
    Let stand 15 minutes
    12. 中火熱鍋, 加油
    In a pan, heat on medium, add oil
    13. 用飯勺挖入鍋內, 煎成肉片
    Use rice spoon is convenience to form patties. Add to the pan to cook
    14. 兩面煎熟即可
    Cook both sides until done
    15. 全部肉片煎好就可以享用囉
    Enjoy after cooking. It can be eaten solo or making sandwiches
